Corn Muffins

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • 1 1/4 cups yellow cornmeal
  • 1 1/4 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 1/2 cups milk
  • 3/4 cup unsalted butter

Recipe

  • 1 preheat 350.
  • 2 grease the muffin tin.
  • 3 mix together the dry ingredients in a large bowl. stir in the liquid ingredients (eggs- slightly beaten, butter-melted and cooled off). blend until slightly lumpy and just combined.
  • 4 bake 18-20 minutes.
