Corn Patties

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 (11 1/2 ounce) can corn, drained
  • 1 medium onion, chopped
  • 1 teaspoon curry powder
  • 2 cloves garlic, crushed or pressed
  • 1 teaspoon ground coriander
  • 2 chopped scallions
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • salt
  • 1 large egg
  • 4 tablespoons oil

Recipe

  • 1 in a medium mixing bowl, mash the corn lightly.
  • 2 add each of the remaining ingredients except for the oil, one at a time, mixing each one thoroughly with the batter.
  • 3 heat oil over medium-high heat.
  • 4 drop patties by spoonful into skillet.
  • 5 allow to cook 5-10 minutes, turning once, or until golden brown on each side.
  • 6 (do not turn over too early, or they will fall apart).
  • 7 serve witha little salsa.
