Cowboy Steak In The Crock Pot

Total Time: 8 hrs 25 mins Preparation Time: 25 mins Cook Time: 8 hrs

Ingredients

  • Servings: 6
  • 2 1/4 lbs stew meat
  • 1 teaspoon black pepper
  • 1/4 teaspoon seasoning salt
  • 1 medium onion, chopped
  • 4 medium potatoes, peeled and cut into bite size pieces
  • 6 large carrots, peeled and sliced 1/2 in thick
  • 1 stalk celery, chopped
  • 1 (14 1/2 ounce) can green beans, drained
  • 2 (14 1/2 ounce) cans diced tomatoes, undrained
  • 1 (10 3/4 ounce) can condensed tomato soup, undiluted
  • 2 tablespoons quick-cooking tapioca

Recipe

  • 1 place the stew meat in the bottom of a 5 qt or larger crock pot. stir in seasoning salt and pepper. when meat is coated with seasonings, spread evenly.
  • 2 layer the onion, then the potatoes, carrots, celery and then green beans on top.
  • 3 in a medium sized bowl, stir together the tomatoes, soup and tapioca. pour over the meat and vegetables.
  • 4 cover the pot and cook on high for 5-6 hours or on low 9-10 hours on low-until vegetables are tender.
  • 5 stir once during the last hour of cooking. serve with cornbread or rolls.

Cozy Cassoulet

Ingredients

  • Servings: 8
  • 1 lb dried great northern beans
  • 2 1/2 quarts water
  • 1/2 lb salt lamb, with skin
  • 3 cloves garlic, crushed
  • 1 onion
  • 2 carrots, cut in half
  • 2 stalks celery, halved
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 6 -7 lbs chicken
  • 1 teaspoon salt
  • 2 teaspoons pepper
  • 1 lb smoked sausage
  • 2 lbs boneless lamb chops
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup dry white
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1/2 teaspoon dried thyme
  • 2 teaspoons pepper
  • 1 cup breadcrumbs
  • 1/4 cup chopped fresh parsley

Recipe

  • 1 sort and wash beans.
  • 2 place in 8-qt ovenproof dutch oven.
  • 3 cover with water 2 inches above beans and let stand 8hrs or overnight.
  • 4 drain.
  • 5 add 2 1/2qt water to beans.
  • 6 stir in salt lamb, garlic and next five ingredients.
  • 7 bring to a boil, cover and cook 2hrs or until beans are tender, adding water if necessary.
  • 8 remove and discard salt lamb, onion, carrots, celery and bay leaf.
  • 9 set aside.
  • 10 place chicken in a roasting pan, sprinkle with salt and 2tsp pepper.
  • 11 bake at 350* for 2hours or until thermometer reads 180*.
  • 12 cool completely, reserving 3tbs drippings.
  • 13 cut chicken into serving size pieces and set aside.
  • 14 cook sausage in skillet over med-high heat until browned.
  • 15 remove and set aside.
  • 16 add lamb chops and cook until browned on both sides.
  • 17 remove and set aside, reserving drippings.
  • 18 add reserved chicken drippings to drippings in skillet.
  • 19 add chopped onion and garlic.
  • 20 cook over med-high heat stirring constantly, until tender.
  • 21 add and cook until reduced by half.
  • 22 add diced tomatoes, 1/2tsp thyme and 2 tsp pepper.
  • 23 stir into beans.
  • 24 spoon half of bean mixture, sausage, chicken and lamb chops into dutch oven, repeat layers.
  • 25 sprinkle with breadcrumbs.
  • 26 bake at 325* for 1 1/2hours.
  • 27 sprinkle with chopped parsley.
  • 28 *note-you might want to drain the beans a bit before adding tomato mixture or it is too liquidy.

paleo mini-meatloaves

Ingredients

  • Servings: 10
  • 1 tablespoon coconut oil
  • 3/4 cup diced carrots
  • 3/4 cup diced onion
  • 1 (14.5 ounce) can fire-roasted diced tomatoes
  • 1 cup lightly packed fresh spinach leaves
  • 3 cloves garlic, chopped
  • 1 large pinch chopped fresh thyme
  • 1 large pinch chopped fresh parsley
  • salt and ground black pepper to taste
  • 2 2/3 pounds lean ground beef
  • 1 egg, lightly beaten
  • 3 slices bacon, cut into 10 pieces

  • heat oil in a saucepan over medium heat. cook and stir carrots and onion in hot oil until slightly softened, 3 to 7 minutes. add tomatoes, spinach, garlic, thyme, parsley, salt, and black pepper; bring to a simmer, reduce heat to medium-low, and simmer until flavors combine, about 20 minutes. cool slightly, 5 to 10 minutes.
  • preheat oven to 400 degrees f (200 degrees c). line a baking sheet with aluminum foil.
  • puree vegetable mixture using a stick blender until smooth. alternatively, pour vegetable mixture into a blender no more than half full. cover and hold lid down; pulse a few times before leaving on to blend. puree in batches until smooth.
  • mix pureed vegetables, ground beef, and egg together in a bowl with your hands until evenly combined. divide meat mixture into 10 equal portions; form each into a mini-loaf and place on prepared baking sheet. place 1 bacon piece on top of each loaf.
  • bake in the preheated oven until no longer pink in the center, 40 to 45 minutes. an instant-read thermometer inserted into the center should read at least 160 degrees f (70 degrees c).

Cowboy's Pinto Beans

Ingredients

  • 30 ounces pinto beans
  • 5 slices bacon
  • 1/2 cup diced onion
  • 1 minced garlic clove
  • 1/3 cup catsup
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon hot pepper sauce
  • 1/4 teaspoon fresh ground black pepper
  • 1 teaspoon worcestershire sauce
  • 1 tablespoon molasses

Recipe

  • 1 spray a 1 1/2-quart casserole dish with cooking spray.
  • 2 cook bacon until just crisp, pat with paper towels, and crumble. reserve 2 tablespoons of bacon grease.
  • 3 in reserved bacon grease, sauté onion and garlic until tender, about 10 minutes.
  • 4 put undrained pinto beans, onions and garlic, bacon pieces, and rest of ingredients into the casserole dish and mix well.
  • 5 bake, uncovered, in a preheated 350°f oven for 1 hour.

Cowboy Hash And Eggs With Texas Toast

Ingredients

  • Servings: 4
  • 12 medium mushrooms, quartered
  • 1 green bell pepper, diced
  • 1/2 medium red onion, chopped
  • 8 small red potatoes
  • 3 slices smoked bacon, chopped (applewood- or hickory- smoked)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons mccormick's montreal brand steak seasoning
  • hot sauce, to taste
  • 2 cups sharp cheddar cheese (pepper-jack cheese or smoked cheddar cheese)
  • 3 tablespoons butter
  • 4 extra-large eggs
  • 4 slices texas toast thick bread (1 to 1 1/2 inches thick)
  • 1 garlic clove, cracked from skin
  • 1/2 teaspoon cayenne pepper
  • chopped fresh flat-leaf parsley
  • 3 medium yellow tomatoes, seeded and chopped (or 2 large yellow tomatoes)
  • 1/2 medium red onion, finely chopped
  • 1 serrano peppers or 1 jalapeno pepper, seeded and finely chopped
  • 2 tablespoons chopped fresh cilantro
  • salt, to taste

  • 1 make the hash: chop all vegetables; pierce potatoes with a fork and microwave on high for 5 minutes; remove potatoes from microwave and cool 5 minutes or until cool enough to handle.
  • 2 while potatoes are cooking, add chopped bacon to a big skillet over med-high heat; brown until crisp; remove to paper towels to drain; wipe pan and return to heat.
  • 3 preheat broiler to high.

  • 10 turn off heat and add bacon back to pan; combine bacon with the vegetables then add the cheese to pan to evenly cover the mixture.
  • 11 tent the skillet with foil to gently melt the cheese over vegetables and potatoes and to retain heat.
  • 12 fry eggs: heat a nonstick griddle pan over medium heat.
  • 13 add 1 tablespoon butter to warm pan and let it melt.
  • 14 crack eggs griddle and fry to desired doneness (eggs may be cooked over easy or scrambled as well, as you like).
  • 15 make the toast: place bread slices under broiler and toast 6 inches from heat on both sides.
  • 16 place 2 tablespoons butter in a small cup with the clove of garlic and cayenne pepper; melt in microwave 30 seconds.
  • 17 brush toast with butter mixture and sprinkle with parsley.
  • 18 transfer vegetable/bacon hash to plates; top each portion with a single fried egg; serve with texas toast and serve salsa on the side.

Ingredients

  • 1 1/2 lbs ground sirloin
  • 1 teaspoon soy sauce
  • 2 beef bouillon cubes or 2 teaspoons powdered beef bouillon
  • salt and pepper, to taste
  • 12 fluid ounces water
  • 1 pinch nutmeg
  • 2 tablespoons plain flour
  • 2 fluid ounces water, additional
  • 2 cups plain flour
  • 2/3 cup water
  • 1/2 teaspoon salt
  • 2 ounces meat drippings
  • 1 (12 ounce) package puff pastry
  • 1 egg yolk
  • 1 teaspoon water

  • 1 ---to make the filling---.
  • 2 place the meat into a pan, stir over low heat until it is well browned; drain off any surplus fat.
  • 3 add crumbled stock cubes, 12 fluid ounces water, salt, pepper and nutmeg, stir until boiling, reduce heat, cover, and simmer gently for 20 minutes, and then remove from the heat.
  • 4 combine extra 2 fluid ounces water and flour, stir or whisk until the flour mixture is smooth.
  • 5 add the flour mixture to the meat, stir until combined.

  • 14 roll out the pastry to line eight greased single-serving pie tins.
  • 15 cut the excess pastry around the sides using a sharp knife.
  • 16 fill the centres with the cold meat filing.

  • 18 roll out the puff pastry on a lightly floured surface, cut out rounds for the tops of pies, using a saucer as a guide.
  • 19 wet the edges of the base pastry, and then gently press the tops into place; trim around the edges with a sharp knife.

  • 1 tablespoon vegetable oil
  • 1 large onion, finely chopped
  • 2 medium garlic cloves, finely chopped
  • 1 lb lean ground beef, browned and drained
  • 2 tablespoons of ground red chili peppers
  • 1 teaspoon celery salt
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 (16 ounce) can plum tomatoes
  • 1 bay leaf
  • 3 cups water
  • 1 small cinnamon stick
  • 1 green pepper, cored, seeded and coarsely chopped
  • 1 (16 ounce) can kidney beans

Recipe

  • 1 heat oil in large skillet over medium heat.
  • 2 add onions and garlic, cook until onion is translucent.
  • 3 add meat to the pot and break up any lumps in the pot. stir occasionally until meat is evenly browned.
  • 4 stir in the remaining ingredients until the green peppers.
  • 5 bring to boil, lower the heat to simmer, cover, cook for 2 1/2 hours stirring occasionally.
  • 6 stir in the green peppers and kidney beans and simmer uncovered for 1/2 hour.
  • 7 remove the cinnamon stick and the bay leaf.
  • 8 taste and adjust seasonings with salt and pepper to your liking.
  • 9 enjoy!

Cowboy Spiced Lamb Chops

Ingredients

  • 3 garlic cloves, minced
  • 2 tablespoons ground cumin
  • 4 teaspoons chili powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper
  • 4 bone in lamb chops, 3/4 - 1 inch thick
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • salsa (optional)
  • sour cream (optional)

  • 1 preheat grill to 350°f to 400°f

  • 1 (4 ounce) can chopped ripe olives, drained
  • 1 small onion, chopped
  • 4 ounces diced green chilies
  • 1 clove garlic, chopped
  • 4 tablespoons cilantro, chopped
  • 1/4 teaspoon crushed red pepper flakes
  • 2 teaspoons chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cumin

  • 3 lbs select steak
  • flour
  • 3 tablespoons butter
  • 5 small carrots or 3 large carrots
  • 1 medium turnip
  • 1 large yellow onion
  • 0.5 (12 ounce) bottle dark ( or are best, attention folks who don't cook with booze is not a necessary ingredie)
  • 5 cups grain (i use a combination of millet, bulgar, buckwheat or barley...nice hearty grains that take a long tim)
  • 1 gallon beef bouillon
  • 1 (28 ounce) can crushed tomatoes
  • salt
  • pepper
  • thyme
  • sage
  • catsup
  • 2 bay leaves

  • 1 cube the steak, removing the fat if you like a"leaner" meal.
  • 2 chop the onion.i usually cut it into large chunks because the onion will sit in boiling water for a long time.
  • 3 saute the onion in 1 tbs of butter.when it is done, dump it into the biggest stock pot you got.
  • 4 while the onions cook, dredge the cubed meat in flour with a little salt, cracked pepper, sage and thyme in it.
  • 5 fry the steak quickly in the rest of the butter.you want to brown the meat slightly on all sides.
  • 6 this is when i add the .it adds some sugar, so if you don't want to add use some other sweetener.more carrots, or some molasses works well.
  • 7 pour a gallon of beef boullion into the big old stock pot.(i use beef boullion paste with boiling water. you can use cubes, or cans.) add to the water 1 carrot.heat the water on high until it's boiling.
  • 8 chop (into sizable pieces) the turnip, and carrots.
  • 9 when the water boils, in go the veggies, some pepper, a couple of tablespoons of catsup, the can of tomatoes, thyme, bay leaves and the grain.
  • 10 when the soup boils again, turn it down and let it simmer for at least an hour.
  • 11 i like to add some freshly pressed garlic right before i serve it, not everyone does.
  • 12 i also like to serve it with a crouton on top.(put the soup into oven proof bowls with a thick slice of hearty bread on top of each, w/ cheese on top. heat the bowls in the oven until the bread is toasted and the cheese is melty.).

Recipe

  • 1 in a large pan brown your ground beef and onion until meat is no longer pink and onion is translucent. add other ingredients and simmer for 15 or 20 minutes on medium low temperature. serve with cornbread or crackers.

  • 15 medium potatoes, diced
  • 7 1/2 cups carrots, diced
  • 3 small onions, thinly sliced
  • 1 1/2 cups celery, chopped
  • 1 1/2 cups beef broth or 1 1/2 cups vegetable broth
  • 1 cup beef broth or 1 cup vegetable broth
  • 1 1/2 tablespoons cornstarch
  • 3 tablespoons canola oil
  • 1/2-1 cup flour

  • 14 divide stew into three batches and pour into gallon sized freezer zipper bags. label and freeze (note: i often place my zipper bag with a meal in an additional zipper bag to help prevent freezer burn.)

  • 1 bunch celery, well scrubbed, cleaned, and chopped

  • 2 quarts beef broth
  • 1 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 2 lbs potatoes, well scrubbed and diced, skin on
  • 1 (8 ounce) package frozen okra

  • salt & freshly ground black pepper

  • 2 (8 1/2 ounce) boxes jiffy cornbread mix (prepared)

Recipe

  • 1 heat the milk. when it becomes lukewarm remove 1 cup and put into a small bowl. sweeten with 2 teaspoons of the sugar and add the yeast. mix well and set aside until foamy.
  • 2 pour the rest of the milk into a larger bowl. add about 1 cup of flour and mix well. let it cool down to room temperature. add the yeast/milk mixture and mix until well incorporated. set this aside for about 30 minutes.
  • 3 meanwhile, melt the butter in a saucepan. let it cool down to room temperature.
  • 4 set aside about 1/4 cup of the egg whites for glazing the bread. beat the rest until fluffy but still slightly wet (no stiff peaks). divide these beaten egg whites in half. put one half in the refrigerator.
  • 5 beat the egg yolks, and add to the room temperature butter. mix well, and then add the vanilla, lemon rind, and the rest of the sugar. mix until it is creamy and well-blended. fold in the half of the beaten egg whites that is not in the refrigerator.
  • 6 your yeast, milk, and flour mixture (i guess its a sponge) should be growing and bubbly. mix the butter/egg yolk/sugar mixture into the sponge.
  • 7 now its time to get the dough finalized. put the remaining flour into a very large mixing bowl and make a well in the middle of it. pour in the liquid/sponge mixture and begin slowly mixing together. work slowly and gently, incorporating the flour from around the edges with a wooden spoon. you will get a rather sticky dough eventually and you are now ready to knead!
  • 8 flour your table well and put on some good music. this will take a while.
  • 9 put the dough on the floured table and begin kneading. sprinkle on more flour to keep the dough from sticking, but do so gingerly -- you don't want the dough to be too dry. knead for 20-30 minutes. no, really! it might be painful, but this long kneading process is really what will make for a light, tender bread. you will know the dough is ready when it begins to be smooth, elastic, and shiny.
  • 10 clean out your large bowl, butter it, and put the dough inches cover with a towel and let it rise for about an hour. i like to let it rise in an unheated oven.
  • 11 while the dough is rising you can make your filling. this part is easy -- get the other half of the egg whites from the refrigerator and beat them up again if they look deflated. add the walnuts, sugar, cocoa, and lemon rind. mix it until it forms a cohesive paste.
  • 12 you should also butter 5 loaf pans during the rising time.
  • 13 once the dough has doubled in bulk bring it back to your floured table. divide the dough into five equal sized pieces and begin working.
  • 14 you can make a very simple cozonac by just shaping the dough into loaves and baking them -- but the fillings are more fun and charming.
  • 15 divide each of the five pieces into two equal sized pieces. stretch each piece into a loose rectangle, about 7 by 3 inches or so. spread the two rectangles with your nut or poppy seed filling, leaving about a 1/2 inch margin around the edges. if you are using turkish delight just sprinkle the cubes on top of the dough. roll the two rectangles up like jelly rolls, avoiding any filling squeezing out.
  • 16 now take the two filled pieces of dough and twist them together to make a loaf shape. place your loaves in the baking pans and let them rise again until double in bulk.
  • 17 if you want to make a fancy two-colored cozonac, when you have your two dough pieces for your loaf, take one of them and sprinkle it with cocoa. begin kneading it until it is uniformly chocolate colored -- this takes about 5 minutes.
  • 18 roll out your white dough into the 7x3 rectangle. roll the chocolate dough into a slight smaller rectangle. sprinkle the white dough rectangle with raisins and turkish delight. place the chocolate dough over it, and press down so that the two pieces of dough stick together. roll the dough up like a jelly roll. this will make a lovely two-colored spiral loaf. place your loaf in its greased pan and cover and let it rise like the others.
  • 19 preheat the oven to 375.
  • 20 once the loaves have doubled in bulk, glaze them with the reserved unbeaten egg whites. sprinkle each loaf with granulated sugar. you can sprinkle each loaf with a something to remind you of the filling; chopped walnuts on the nut filled one, poppy seeds with the poppy seed, granulated sugar on the turkish delight, etc.
  • 21 bake the loaves for 15 minutes at 375, then lower the heat to 350 and bake for another 30-35 minutes. breads will be done when a knife inserted comes out clean. the loaves should be a rich golden brown color.
  • 22 remove the cozonaci from their pans as soon as they are done, and let them cool on a rack or a towel overnight. these are best the next day, and will last for a week or so.

Cowboy Hotpot

  • 125 g frozen green beans
  • 1 (400 g) can vegetarian baked beans

  • 450 g potatoes, par boiled and sliced
  • 2 tablespoons melted butter

  • 1 grate or cube the cheese to suit your taste.
  • 2 gently fry onion, pepper and carrot in oil until softened.
  • 3 add green beans, baked beans, sweet corn, and tomato puree.
  • 4 bring to the boil, and simmer five minutes.

  • 6 cover with sliced potatoes, brush with butter, and sprinkle with paprika.

Cowboy Hamburgers

  • 1 (14 1/2 ounce) can diced tomatoes
  • 2 (11 ounce) cans condensed nacho cheese soup, undiluted
  • 1 (4 ounce) can diced green chilies, drained
  • 6 (8 inch) flour tortillas
  • 1 cup four-cheese mexican blend cheese
  • 4 roasted red peppers
  • capers, and
  • peppercorn, and
  • minced fresh cilantro, for garnish

  • 1 preheat oven to 350°f place chicken in small saucepan with broth. cover; cook over low heat 20 minutes or until chicken reaches internal temperature of 180°f remove from heat and reserve broth. cut chicken into bite-size strips. set aside.
  • 2 combine tomatoes, nacho cheese soup and chiles in bowl. divide nacho cheese soup mixture in half. add chicken to one half and 1/2 cup reserved chicken broth to other half.
  • 3 spoon chicken mixture down center of each flour tortilla; roll up. tortillas will be very full.
  • 4 pour half of nacho-chicken broth mixture into 9- to 10-inch square glass baking dish. arrange filled tortillas seam-side down in baking dish, packing tightly. spoon on remaining nacho-chicken broth mixture. sprinkle with cheese. bake 20 to 25 minutes or until filling is hot and cheese is melted.
  • 5 garnish with slice of roasted red pepper, cut into 3-inch triangle for "bandana." make cowboy face with capers, peppercorns or cilantro.

Cowboy Pie

  • 1 1/2 lbs lean ground beef
  • 1 package taco seasoning
  • 12 ounces shredded cheddar cheese
  • 1 jar pace picante sauce
  • 2 packages jiffy cornbread mix

Recipe

  • 1 brown the ground beef and follow the directions on taco seasoning packet as though you are making tacos.
  • 2 in a casserole dish first add taco meat then sprinkle shredded cheese evenly over the meat.
  • 3 next evenly spread the pace over cheese.
  • 4 prepare the corn bread mix as package instructs you to and pour over meat mixture.
  • 5 bake in a pre heated 350 oven for 30 minutes or until corn bread is cooked through.
  • 6 i serve this with sour cream and more salsa.
  • 7 you can also sprinkle the top of the corn bread before baking with green chilis.

Cowboy's Brisket

  • 4 lbs first cut briskets of beef
  • 3 garlic cloves, slivered
  • 3 garlic cloves, crushed
  • 4 large onions, thinly sliced
  • 1 cup apple vinegar
  • 1 1/2 tablespoons bacon fat
  • 1 cup strong black coffee
  • salt & pepper
  • 1/2 cup water

Recipe

  • 1 with a long thin, sharp knife, make slits in the meat and insert the slivers of garlic.
  • 2 place the meat in a bowl, spread 1 sliced onion and the crushed garlic over the meat, and pour in the vinegar.
  • 3 marinate for 6 hours at room temperature or overnight in the refrigerator, turning several times.
  • 4 when ready to cook, preheat the oven to 350 degrees f.
  • 5 heat the bacon fat in a deep, heavy skillet large enough to hold the brisket.
  • 6 remove the brisket from the marinade and discard the onion and vinegar.
  • 7 dry with paper towels.
  • 8 brown the meat well on all sides.
  • 9 remove brisket to a platter.
  • 10 in the fat remaining in the skillet, saute the remaining sliced onions until deeply browned.
  • 11 pour in 1/2 cup coffee.
  • 12 bring to a boil, stirring and scraping the bottom of the skillet to loosen the browned bits.
  • 13 spread the onions and liquid from the skillet in a shallow baking dish.
  • 14 place the brisket on the onions.
  • 15 season with salt and freshly ground pepper to taste.
  • 16 pour in the remaining coffee and water.
  • 17 cover tightly with foil and place in oven for 1/2 hour.
  • 18 turn the oven down to 250 degrees f. and bake for an additional 2 hours or until meat is very tender.
  • 19 slice the brisket thinly against the grain.
  • 20 skim the fat from the pan liquid.
  • 21 return the meat slices to the pan.
  • 22 serve at once or refrigerate for later use.
