Amaretto Cheesecake - Sugar Free

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1/2 cup almond flour
  • 3 sliced almonds (to garnish)
  • 1 lb cream cheese
  • 3/4 cup splenda sugar substitute
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons amaretto (i use davinci sf amaretto syrup)
  • 3/4 cup sour cream

Recipe

  • 1 spread amond flour in a baking pan and bake in a preheated 325°f oven for 4 minutes or until lightly toasted. let cool.
  • 2 with an electric mixer, beat cheese and splenda until smooth. mix in eggs, vanilla, amaretto and sour cream.
  • 3 pour batter into a greased 9-inch springform pan. sprinkle garnish almonds on the top.
  • 4 bake in the middle of a preheated 325°f oven for 25 minutes or until just barely set. turn off the oven, leave the door ajar, and let cool in the oven for 1 hour longer. chill. to serve, remove pan sides and cut into wedges.

Baked Rigatoni

Ingredients

  • Servings: 6
  • 1/2 lb rigatoni pasta
  • 1 (15 ounce) container ricotta cheese
  • 3 cups mozzarella cheese, divided and shredded
  • 3 cups spaghetti sauce, divided
  • 1/2 cup parmesan cheese, grated

Recipe

  • 1 preheat oven to 350 degrees. make rigatoni according to package, just until tender. drain and place in large bowl.
  • 2 mix ricotta cheese and half the mozzarella cheese with rigatoni.
  • 3 spray 9 x 13 baking pan with non-stick cooking spray:cover the bottom of pan with half the spaghetti sauce. spoon the rigatoni mixture in to the pan. cover with remaining spaghetti sauce. sprinkle with parmesean cheese and top with remaining mozzarella cheese.
  • 4 bake 30 minutes until cheese melts.

Basic Pancakes

Ingredients

  • 1 cup all-purpose flour, spooned and levelled
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 tablespoon vegetable oil

Recipe

  • 1 in a small bowl, whisk together flour, sugar, baking powder and salt, set aside.
  • 2 in a medium bowl, whisk together milk, butter (or oil) and egg. add dry ingredients to milk mixture, whisk until just moistened (do not overmix, a few small lumps are fine).
  • 3 heat a large skillet (nonstick or cast iron) or griddle over medium. fold a sheet of paper towel in half and moisten with oil, carefully rub skillet with oiled paper towel.

  • 3/4 cup brown sugar, firmly packed
  • 1/2 cup applesauce
  • 1 large egg
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda

  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • vegetable oil
  • 1/2 cup sugar
  • 2 teaspoons ground cinnamon

Recipe

  • 1 beat the shortening and brown sugar at medium speed of an electric mixer until blended.
  • 2 add the applesauce and egg; beat well.
  • 3 combine the flour, baking soda, salt, nutmeg and cinnamon.
  • 4 add to the shortening mixture. beat well.
  • 5 roll the dough to 1/2 inch thickness on a lightly floured surface.
  • 6 cut the dough with a floured 2-1/2 inch doughnut cutter.
  • 7 pour the oil to a depth of 2 inches in a large dutch oven.
  • 8 heat oil to 375 degrees fahrenheit.
  • 9 drop in 3 to 4 doughnuts at a time.
  • 10 cook 1-1/2 minutes on each side.
  • 11 drain on paper towels.
  • 12 combine 1/2 cup sugar and 2 teaspoons of cinnamon.
  • 13 roll the doughnuts in cinnamon-sugar mixture.
  • 14 cool on wire racks.

Baked Rigatoni With Eggplant

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 10
  • kosher salt
  • extra virgin olive oil
  • 6 links fennel lamb sausage (about 3/4 pound)
  • 1 large eggplant, cut into 1-inch pieces (about 1 1/2 pounds)
  • 1 large onion, chopped
  • 3 garlic cloves, chopped
  • 28 ounces peeled whole tomatoes, preferably san marzano
  • 1 leaf fresh basil
  • 1 lb rigatoni pasta
  • 1 lb fresh mozzarella cheese
  • fresh ground black pepper
  • 1 cup freshly grated parmigiano-reggiano cheese

Recipe

  • 1 bring a large pot of salted water to a boil over high heat for the pasta. get yourself a 9 by 13-inch glass or ceramic baking dish.
  • 2 heat a 2 count of olive oil in a large skillet over medium-high heat. add the sausages and toss in the hot oil for 3 to 4 minutes, you want them nicely browned on the outside but still rare on the inside. put the sausages in the baking dish.
  • 3 turn the heat down to medium. add a generous 1/3 cup of oil to the skillet and get it hot. add as many eggplant pieces as you can comfortably fit in a single layer and sprinkle well with salt. cook, turning, for 7 to 8 minutes, until the eggplant is nice and browned, crisp on the outside and soft on the inside. use a spatula to put the eggplant into the baking dish with the sausage. cook the rest of the eggplant pieces, adding more oil to the pan, as needed, and putting the finished eggplant into the baking dish.
  • 4 add another 2 count of oil to the skillet, then your onion and garlic, and cook for 3 to 4 minutes, until translucent. dump the whole can of tomatoes and their juices into a bowl and crush the tomatoes with your hands to break them up; add that to the pan with the basil and cook it down until pulpy and relatively thick. this will take about 15 minutes.
  • 5 by this time your pasta water will be boiling. add the rigatoni, give it a stir, and cook for 6 to 7 minutes, it should be slightly firm as it will cook further in the oven. ladle out 1/2 cup of the pasta cooking water and reserve; the drain the rigatoni.
  • 6 preheat the oven to 450 degrees f. chop the sausages into nice big, bite-size chunky pieces and return the pieces to the baking dish. add the tomato sauce, rigatoni, and the reserved pasta water. break up half the mozzarella over the mixture, season with salt and pepper, and gently mix with your hands or a spatula. dust with the parmigiano and drizzle with more olive oil. bake for 15 minutes. spread the remaining mozzarella in an even layer over the top and continue to bake for another 10 minutes or until golden brown and bubbly.

  • 1/2 cup butter or 1/2 cup margarine
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup milk
  • 1/4 cup almond flavored liqueur (amaretto)
  • 1 large apple, peeled,cored and diced (large dice)

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 grease 4 mini-loaf pans or 1 regular-sized loaf pan.
  • 3 with an electric mixer, beat butter until light and fluffy.
  • 4 add eggs and vanilla, continuing to beat until well mixed.
  • 5 in a separate bowl, combine flour, sugar, baking powder and cinnamon, mix well.
  • 6 add half of the flour mixture to the butter/egg mixture, mix well.
  • 7 add milk and amaretto to the mixture, then the rest of the flour mixture, beating well after each addition.
  • 8 fold in chopped apple, mixing gently but thoroughly.
  • 9 pour mixture into loaf pan, or divide among mini-loaf pans.
  • 10 bake at 350 degrees for 45-50 minutes (25-30 for mini-loaf pans) until toothpick stuck in the middle comes out clean.
  • 11 remove from oven and let cool in pan for 10 minutes.
  • 12 remove from pan and let cool on a rack.

Baked Rotini Pasta With Ricotta Pesto

  • 1/2 cup packed basil leaves
  • 1/4 cup chopped unblanched almonds
  • 1 clove chopped garlic
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 4 tablespoons grated parmesan cheese
  • 12 ounces rotini pasta (spirals)
  • 3 cups ricotta cheese
  • 8 ounces shredded mozzarella cheese
  • black pepper

  • 1 puree the basil leaves, almonds, garlic and salt together in a food processor.

  • 1 cube the squash unpeeled into 1 inch cubes. use the small skinny chiles.
  • 2 in small saucepan, bring 4 cups water to boil. add peas and simmer until tender but not mushy. about 35 minutes. drain and set aside.

  • 2 tablespoons butter
  • 2 tablespoons lard (or use butter or oil)
  • 50 g bacon, diced

Recipe

  • 1 peel potatoes, grate or cut into thin strips and mix with the salt.
  • 2 heat the butter and lard (or oil) in a frying pan. add the diced bacon and potato and fry gently, stirring gently and frequently. if you want a slimmer version, you can pre-cook the bacon and this way omit the bacon fat.
  • 3 bring together into a cake and cover with an upside-down plate. fry over gentle heat for 20 minutes.

  • 1/2 teaspoon kosher salt or 1/2 teaspoon coarse salt

  • 1 mix flour and salt in mixing bowl. cut shortening into the flour with a pastry cutter, until mixture resembles the texture of tiny split peas. do not use your hands to try and mix it; the heat from your hands will melt the shortening, causing the pastry to be "heavy," not light and fluffy.
  • 2 once the mixture is the right texture,, add the ice water and combine with a fork. it may appear to need more water, it does not. quickly gather the dough into a ball and flatten into a 4-inch-wide disk. wrap it with plastic, and refrigerate at least 30 minutes.
  • 3 remove dough disk from refrigerator. if stiff and very cold, let stand until dough is cool but soft enough to work with.
  • 4 using a floured rolling pin,roll dough disk on a lightly floured surface from the center out in each direction, forming a 12-inch circle. to transfer dough, carefully roll it around the rolling pin, lift and unroll dough, centering it in an ungreased 9-inch regular or deep-dish pie plate. Basic Sauteed Chicken Breast

  • 1 lb boneless skinless chicken breast
  • 1 pinch kosher salt
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon garlic
  • 1/2 cup onion, diced
  • 1/4 cup mushroom, sliced
  • 1 cup chicken broth
  • 2 tablespoons lemon juice

Recipe

  • 1 begin by trimming the chicken breasts if they need trimming. i use my beloved kitchen scissors and snip off any shaggy bits of fat or gristle.
  • 2 pat them dry with paper towels (to helps them brown) and sprinkle them with some kosher salt.
  • 3 heat a very large pan over medium-high heat and add the butter, which should melt and foam, and the olive oil, which should stop the butter from burning. when the fat is all very hot but not turning black (recipes say "when the foam subsides"), add the chicken breasts in one layer. now leave them alone for 5 or so minutes while the bottom gets nice and crusty and brown.
  • 4 use tongs or a spatula to flip them over as they brown, and then cook another 4 or so minutes until the bottom is very brown and the chicken is cooked through. you may want to cut a piece open to check, but pressing a cooked breast with your fingertip will give you a feel for its doneness, which will develop over time into the skill of knowing when it's done without cutting it.
  • 5 pile the chicken on a heat-proof plate and pop it into a 200ºf heated oven while you "deglaze" the pan. add the garlic, onion and mushrooms until tender. pour half the broth in and scrape with a spatula to dissolve all the yummy browned bits while the broth bubbles and boils furiously in the hot pan.
  • 6 when the wine has cooked down about halfway, add the broth & juice, turn the heat to high, and cook until the sauce seems syrupy and delicious. taste it for salt, then drizzle it over the chicken, sprinkle with parsley, and serve. sometimes, if the chicken has browned but doesn't seem quite cooked through, i leave it in the pan while i make the sauce so that it can simmer in there a bit longer.

  • 900 ml of hot vegetable stock, from a cube is fine
  • 1 pinch saffron
  • 1 tablespoon butter
  • 1 onion, finely chopped
  • 400 g long grain rice
  • 1 orange, juice and zest of, grated

Recipe

  • 1 heat the oven to 190c/gas 5.
  • 2 add the saffron to the hot stock.
  • 3 heat the butter in a flameproof casserole.
  • 4 gently fry the onion for 5 minutes until softened and golden.
  • 5 add the rice and cook for a further minute until coated with butter and turning slightly transparent.
  • 6 add the stock and the orange zest and juice.
  • 7 bring to the boil, then cover with a close fitting lid.
  • 8 bake for 25-30 minutes until liquid is absorbed and grains are tender.

Baked Pumpkin Doughnut Holes

  • 2 cups flour
  • 1 3/4 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup canola oil
  • 1 cup packed light brown sugar
  • 1 cup pumpkin
  • 1 cup ultrafine unbleached cane sugar
  • 1 tablespoon cinnamon
  • 2 -4 tablespoons butter, melted (optional)

Recipe

  • 1 preheat oven to 425 f and lightly spray mini muffin tins with non-stick cooking spray.
  • 2 whisk flours, baking powder, 1 1/2 tsp cinnamon, and salt in a large mixer bowl until combined.
  • 3 whisk eggs, oil, brown sugar, and pumpkin in medium mixing bowl until well combined.
  • 4 pour pumpkin mixture into flour mixture and stir until just combined.
  • 5 fill each mini muffin cup with about 1 rounded tbsp or until about half full.
  • 6 bake for 9-10 minutes until toothpick inserted in middle comes out clean, then cool on wire rack until cool enough to handle.

Basic Ratatouille

  • 2 large aubergines
  • 4 small courgettes
  • 2 red peppers
  • 4 large ripe tomatoes
  • 5 tablespoons olive oil
  • 1 bunch basil, torn
  • 1 medium onion, sliced
  • 3 garlic cloves, crushed
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sugar

Recipe

  • 1 dice aubergines, peel and dice peppers and slice courgette.
  • 2 skin, deseed and chop the tomatoes.
  • 3 fry the aubergines in 2 tbsp olive oil for 5 min until brown and soft. remove and add another tbsp oil to fry the courgettes until golden do the same again for the peppers.
  • 4 fry the onions in the last tbsp oil for five minutes add the garlic and fry for another minute.
  • 5 add sugar, tomatoes and half the basil. add the veg and cook for five minutes.
  • 6 serve garnished with the basil.

Benihana Hibachi Chicken Rice

  • 4 cups cooked rice
  • 1 cup frozen peas, thawed
  • 2 tablespoons carrots, finely grated
  • 2 eggs, beaten
  • 1/2 cup onion, diced
  • 1 1/2 tablespoons butter
  • 2 tablespoons soy sauce
  • 1 cup chicken breast, diced into 1 cubes
  • salt, to taste
  • black pepper, to taste

Recipe

  • 1 cook rice following instructions on package (bring 2 cups water to a boil, add rice and a dash of salt, reduce heat and simmer in covered saucepan for 20 minutes). pour rice into a large bowl to let it cool in the refrigerator.
  • 2 scramble the eggs in a small pan over medium heat. separate the scrambled chunks of egg into small pea-size bits while cooking.
  • 3 when rice has cooled to near room temperature, add peas, grated carrot, scrambled egg and diced onion to the bowl. carefully toss all of the ingredients together.
  • 4 melt 1 1/2 tablespoons of butter in a large frying pan or flat grill over medium/high heat.
  • 5 when butter has completely melted, dump the bowl of rice and other ingredients into the pan and add soy sauce plus a dash of salt and pepper. cook rice for 6-8 minutes over heat, stirring often.
  • 6 this fried rice can be prepared ahead of time by cooking the rice, then adding the peas, carrots and egg plus half of the soy sauce. keep this refrigerated until you are ready to fry it in the butter. that's when you add the chicken, salt, pepper and remaining soy sauce.

Amaretto Rum Cherry Cream Pie

  • 1 10-inch deep dish pie crust (prepared or bought)
  • 1 can prepared cherry pie filling
  • 6 egg yolks
  • 1 cup sugar
  • 1 tablespoon unflavored gelatin
  • 1/2 cup cold water
  • 1 pint whipping cream
  • 1/4 cup amaretto liqueur
  • 1/4 cup rum
  • 1/4 cup grated semisweet chocolate

Recipe

  • 1 beat egg yolks til light, gradually slowly adding the 1 cup sugar, til thick, light and fluffy.
  • 2 soften gelatin in water in small sauce pan, then bring it to a boil.
  • 3 in a very slow ribbon stream slowly beat into egg yolk mixture.
  • 4 set aside.
