Baked Ricotta Rolls

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 4 bread rolls, round ones
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1 garlic clove, crushed
  • 1 egg, lightly beaten
  • 1/2 cup sun-dried tomato, drained, chopped
  • 1/2 cup olive, pitted, diced
  • 100 g eggplants, slices bottled, char grilled
  • 8 large fresh basil leaves

Recipe

  • 1 cut "lids" from bread rolls.
  • 2 remove bread from inside rolls, leave 1 cm shell.
  • 3 combine cheeses, garlic, egg, tomatoes and olives in a bowl.
  • 4 place eggplant slices in base of rolls.
  • 5 top with basil leaves.
  • 6 and then top with ricotta mixture.
  • 7 replace lids, wrap rolls in foil.
  • 8 bake in very hot oven for 15 mins until heated through.
