Baked Ricotta Rolls

Ingredients
- Servings: 4
- 4 bread rolls, round ones
- 1 cup ricotta cheese
- 1/2 cup grated parmesan cheese
- 1 garlic clove, crushed
- 1 egg, lightly beaten
- 1/2 cup sun-dried tomato, drained, chopped
- 1/2 cup olive, pitted, diced
- 100 g eggplants, slices bottled, char grilled
- 8 large fresh basil leaves
Recipe
- 1 cut "lids" from bread rolls.
- 2 remove bread from inside rolls, leave 1 cm shell.
- 3 combine cheeses, garlic, egg, tomatoes and olives in a bowl.
- 4 place eggplant slices in base of rolls.
- 5 top with basil leaves.
- 6 and then top with ricotta mixture.
- 7 replace lids, wrap rolls in foil.
- 8 bake in very hot oven for 15 mins until heated through.
