Baked Rice Pudding With Cranberry And Banana

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 2
  • 2 tablespoons pudding rice
  • 200 ml milk
  • 1 pinch cinnamon
  • 1 teaspoon honey
  • 1 pinch nutmeg
  • 1 banana, quartered
  • 1 teaspoon brown sugar
  • 1 teaspoon chopped hazelnuts
  • 1 teaspoon dried cranberries

Recipe

  • 1 heat oven to 180c/350f.
  • 2 mix the milk, cinnamon, honey and nutmeg.
  • 3 divide the rice between two ramekins. pour over the milk mixture and bake for 30 minutes.
  • 4 coat the banana pieces with the brown sugar and place in the oven 5 mins from the end of cooking for the pudding.
  • 5 remove puddings carefully! and serve topped with the banana, nuts and cranberries.
