Baked Rice Pudding With Cranberry And Banana

Ingredients

- 2 tablespoons pudding rice
- 200 ml milk
- 1 pinch cinnamon
- 1 teaspoon honey
- 1 pinch nutmeg
- 1 banana, quartered
- 1 teaspoon brown sugar
- 1 teaspoon chopped hazelnuts
- 1 teaspoon dried cranberries
Recipe
- 1 heat oven to 180c/350f.
- 2 mix the milk, cinnamon, honey and nutmeg.
- 3 divide the rice between two ramekins. pour over the milk mixture and bake for 30 minutes.
- 4 coat the banana pieces with the brown sugar and place in the oven 5 mins from the end of cooking for the pudding.
- 5 remove puddings carefully! and serve topped with the banana, nuts and cranberries.
