Baked Reuben Chicken

Ingredients

- 8 skin-on chicken thighs
- 1 (1 lb) bag fresh sauerkraut
- 1 (16 ounce) bottle thousand island dressing (or homemade)
- 8 -10 ounces swiss cheese, sliced
Recipe
- 1 in heavy skillet, sear thighs 5 to 6 minutes on each side.
- 2 spread kraut into 3 qt baking dish.
- 3 place thighs on top, skin side up.
- 4 place cheese slices evenly over entire dish.
- 5 spread dressing evenly over cheese.
- 6 cover with foil and bake at 350 for 20 minutes.
- 7 remove foil and bake additional 20 minutes.
- 8 note: boneless, skinless chicken breasts can be substituted. cut breasts so 2 pieces equal a serving portion. lightly salt and pepper the chicken. do not skillet brown. increase cooking time 8-10 minutes.
