Baked Reuben Chicken

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 8 skin-on chicken thighs
  • 1 (1 lb) bag fresh sauerkraut
  • 1 (16 ounce) bottle thousand island dressing (or homemade)
  • 8 -10 ounces swiss cheese, sliced

Recipe

  • 1 in heavy skillet, sear thighs 5 to 6 minutes on each side.
  • 2 spread kraut into 3 qt baking dish.
  • 3 place thighs on top, skin side up.
  • 4 place cheese slices evenly over entire dish.
  • 5 spread dressing evenly over cheese.
  • 6 cover with foil and bake at 350 for 20 minutes.
  • 7 remove foil and bake additional 20 minutes.
  • 8 note: boneless, skinless chicken breasts can be substituted. cut breasts so 2 pieces equal a serving portion. lightly salt and pepper the chicken. do not skillet brown. increase cooking time 8-10 minutes.
