Basic Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 2 cups unbleached flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup unsalted butter, melted (or 1/3 cup vegetableoil)
  • 1 egg

Recipe

  • 1 preheat oven to 400*. grease muffin pans. sift flour. then sift again with sugar, baking powder, and salt into a large bowl. measure milk in a smaller bowl. add melted butter or oil and egg. beat with a whisk or fork to mix well. make a well in center of flour mixture. pour in milk mixture all at once. stir quickly with fork until all flour is moistened. do not beat or overmix. there may be a few lumps. sisregard them. quickly spoon batter into muffin pans. bake 20-25 minutes, or until tops are golden and a wooden pick inserted in center comes out clean. cool slightly on a rack. turn out and serve warm.
