Cranky's Granola

Ingredients

  • Servings: 20
  • 1 1/2 lbs rolled oats (6 cups)
  • 8 ounces slivered almonds (2 cups)
  • 4 1/2 ounces pepitas (shelled pumpkin seeds - 1/2 cup)
  • 4 ounces flax seeds (1/2 cup)
  • 5 1/2 ounces sunflower seeds (shelled, 1 cup)
  • 6 1/2 ounces coconut, flaked (1 1/2 cup)
  • 8 ounces brown sugar (1/2 cup plus 4 tbs packed)
  • 1/2 cup honey (or real maple syrup)
  • 1/2 cup canola oil
  • 1 1/2 teaspoons salt, kosher
  • 1 cup dried fruit

Recipe

  • 1 preheat oven to 250°f.
  • 2 combine all ingredients except the fruit in a large bowl and combine thoroughly. sprinkle mixture onto two greased cookie sheets and bake for 1 hour, stirring every 15 minutes. cool in pan and add dried fruit. store in an airtight container.

  • preheat oven to 350 degrees f (175 degrees c). lightly grease a 9x5 inch loaf pan.

  • 12 ounces london broil beef or 12 ounces round steaks
  • 8 ounces sour cream
  • 2 tablespoons all-purpose flour
  • 2 teaspoons beef bouillon granules
  • 1/2 cup water
  • 1/4 teaspoon ground black pepper
  • 2 cups sliced fresh mushrooms
  • 1/2 cup yellow onions or 1/2 cup onion
  • 1 garlic clove, minced
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 cups of hot cooked egg noodles

Recipe

  • 1 trim fat off beef (if any) cut meat into 2 inch pieces.
  • 2 in small bowl stir together sour cream & flour. mix well than stir in bouillon, water, pepper. mix well and set aside.

  • 1 (8 ounce) can crushed pineapple with juice

Cranky's Weekday Chicken Parmesan

Ingredients

  • Servings: 3
  • 28 ounces tomatoes, stewed crushed (one large can)
  • 1 garlic clove, crushed
  • 3 teaspoons olive oil, divided
  • 1/2 teaspoon basil, dried
  • 1 bay leaf
  • 1 cup dried breadcrumbs, unseasoned
  • 1 1/2 teaspoons parmesan cheese, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano, dried
  • 1 1/2 lbs chicken tenderloins

Recipe

  • 1 in a small saucepan, add the tomatoes, bay leaf, and garlic. bring to a simmer and cook, uncovered, for 30 minutes. stir in dried basil and add salt and pepper to taste.
  • 2 meanwhile, in a large resealable plastic bag, combine the bread crumbs, parmesan cheese, salt, garlic powder, and oregano. add chicken; seal bag and shake to coat. refrigerate if making for a future cooking day.

  • 4 slices whole wheat bread, cut into 1/2-inch cubes (about 3 cups)

  • 1/2 cup chopped walnuts
  • 2 tablespoons butter, melted
  • 4 (8 ounce) packages cream cheese, at room temperature

  • 1 (8 ounce) container sour cream
  • 1/2 cup all-purpose flour
  • 1 1/2 teaspoons vanilla extract
  • 1 cup canned pumpkin

  • 4 pour half of batter into crust. bake 40 minutes or until center jiggles slightly when pan is shaken. meanwhile, at low speed beat pumpkin, cinnamon an ginger into remaining batter. spread cranberry sauce over hot cheesecake layer, leaving 1/2" border. top with pumpkin batter. batter will almost come up to top edge of pan. bake 40-45 minutes or until center jiggles slightly when pan is shaken. turn oven off; let cake stand in oven with door closed 20 minutes. run knife around edge to loosen. cool. cover; refrigerate overnight. if desired, transfer whipped cream to pastry bag fitter with large star tip; pipe onto cake. garnish with cranberries.

Cranbleberry Pie

  • 1/4 teaspoon salt
  • 2 pie crusts
  • 5 tablespoons cornstarch
  • 1 2/3 cups blueberries

  • 2 combine sugar, cornstarch, and salt and add to berries, mixing well.
  • 3 put bottom pie crust into pie pan and spread mixture on top.

Cranberry-raspberry Fool

Ingredients

  • Servings: 8
  • 1 lb fresh cranberries or 1 lb frozen cranberries
  • 2 cups fresh raspberries or 2 cups frozen raspberries
  • 1/2 cup orange juice
  • 1 cup orange juice
  • 2 tablespoons orange juice
  • 1 pinch salt
  • 3 cups heavy cream

Recipe

  • 1 bring cranberrries, raspberries, orange juice, 1 cup sugar, and salt to boil in medium saucepan over medium-high heat. reduce heat to medium and simmer until cranberries are softened and mixture becomes jammy, about 15 minutes. purée in blender or food processor until smooth, then press through fine mesh sieve into a medium bowl. set aside to cool to room temperature.
  • 2 with electric mixer, beat 2 cups cream to stiff peaks. gently fold into cooled cranberry mixture until no streaks remain. spoon mixture into eight 6-8 oz. goblets or bowls.
  • 3 when ready to serve, beat remaining 1 cup cream, and remaining 2 tablespoons sugar to stiff peaks. dollop cream onto fools. serve.
  • 4 make ahead: the fools can be refrigerated for up to 8 hours. dollop whipped cream on top just before servng.

  • 1 cook the pasta in a large pot of boiling salted water until al dente, about 8 minutes.

  • 4 in a large saute pan or skillet, melt the butter over medium-high heat.

  • 3 drain peaches, reserving some syrup. arrange peach slices over this mixture.
  • 4 beat cream cheese, peach syrup and 1/2 cup sugar at medium speed for 2 minutes.
  • 5 spoon and spread over peaches to within 1 inch of batter.
  • 6 mix sugar and cinnamon together and sprinkle over top of everything.
  • 7 bake at 350 degrees until crust is golden brown (about 30 to 35 minutes).
