  • 3 bunches asparagus, trimmed
  • 1/2 lb mushroom, thinly sliced
  • 3 tablespoons fresh lemon juice

Recipe

  • 1 mash bananas, mix with sugar and eggs, set aside.

  • 10 empanada wrappers
  • 8 ounces ricotta cheese (grated mozzarealla can be substituted)
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon lemon juice or 1/4 teaspoon lemon peel
  • 2 cups granulated sugar
  • 1 3/4 cups light corn syrup
  • 1/4 cup orange blossom water or 1/4 cup rose water
  • 1/3 cup warm water

Recipe

  • 1 in a small bowl, mix cheese with sugar. add lemon juice and mix well, either by hand or in blender or processor. cover and set aside.
  • 2 in a medium saucepan, combine sugar, water, and corn syrup. bring to a boil, add orange blossom or rose water. stir well to prevent sticking. reduce heat to low and allow to sit until ready to use.

  • 2 ounces butter (1/2 stick)

  • 1 stir the contents of the vegetable seasoning packet, butter and water in a bowl to melt the butter.

Bean And Squash Stew

Ingredients

  • Servings: 6
  • 4 tablespoons olive oil
  • 1 teaspoon cumin seed
  • 1 teaspoon mustard seeds
  • 2 onions, chopped
  • 2 garlic cloves, finely chopped
  • 2 red chilies, seeded and sliced
  • 900 g potatoes, scrubbed and rougly chopped
  • 4 tablespoons curry paste
  • 1 1/4 liters vegetable stock
  • 900 g butternut squash, peeled and roughly chopped

  • 1 heat the oil in a large pan, add the cumin and mustard seeds and cook for 1 minute. when they begin to splutter and pop, add the onion, garlic and chilli and cook for 3-4 minutes ubtil softened.
  • 2 stir in the potatoes and cook for 3 minutes. add the curry paste and vegetable stock, bring to the boil and simmer for 5 minutes. add the butternut and simmer for a further 15 minutes until the vegetables are tender. add the black eyed beans and tomatoes and continue to cook for 2-3 minutes. season to taste.
  • 3 divide the stew between individual dishes, sprinkle over chopped coriander and serve with lemon wedges.

Asparagus With Cured Ham And Ribeiro Wine

  • spanish extra-virgin olive oil
  • 20 asparagus spears (think stalks)
  • 4 slices spanish cured ham

Recipe

  • 1 brush a large skillet or flat griddle with a little olive oil and heat over medium heat.
  • 2 divide the asparagus into 4 bundles of 5 stalks.
  • 3 wrap each bundle with a slice of ham.
  • 4 place the bundles in the skillet. cook the asparagus on each side until they caramelize slighty and the ham becomes crispy, 5-8 minutes.
  • 5 note: be careful not to let the bundles over cook. you want the asparagus to stay crisp and for the ham not to burn.

  • 1 scallion, chopped
  • 1 cup fresh asparagus

  • 2/3 cup swiss cheese, grated

  • 1 cut asparagus into 1 inch pieces. in a small frying pan, melt the butter and saute the scallion and asparagus for a few minutes until both are fairly soft. place the mixture in the bottom of a well-oiled 1 quart casserole.

  • 1 preheat oven to 425 degrees.
  • 2 place chicken breasts in 9"x13" or 15"x10" glass baking dish.
  • 3 centrally place 1tbsp butter/margarine on each chicken breast.
  • 4 sprinkle garlic and onion powder over each breast, approx 1tsp of each per breast.

  • 2 tablespoons cornstarch
  • salt & freshly ground black pepper
  • 4 boneless skinless chicken breast halves, cubed
  • vegetable oil

Ingredients

  • 1 cup sorghum flour (jowar flour)
  • 1 1/2 cups water
  • salt

Recipe

  • 1 heat water and add salt.
  • 2 when it starts boiling, add the flour and mix continuously till all the water is absorbed. take off the heat.
  • 3 when it is still hot, knead the dough on a flat board.
  • 4 spread using the rolling pin (for rolling, apply dry flour as much as needed. if the roti breaks, make it into a ball again, apply some more flour and roll).
  • 5 fry on the heated tava (griddle made from cast iron, i use a cast iron frying pan).
  • 6 serve hot.

Bean And Vegetable Tortilla Stacks

Ingredients

  • 1 (6 ounce) package monterey jack pepper cheese
  • 1 cup part-skim ricotta cheese
  • 1 cup shredded carrot
  • 1/2 cup chopped radish
  • 1/4 cup ripe olives
  • 1 (15 ounce) can garbanzo beans, drained
  • 3 garlic cloves, halved
  • 1/2 cup firmly packed parsley sprig
  • 1 medium yellow onion (halved)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cumin
  • 12 (6 inch) corn tortillas
  • 1 large pasilla dried red chili pepper
  • 1 medium onion, quartered
  • 4 garlic cloves
  • 1 (28 ounce) can plum tomatoes, drained
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon hot sauce

Recipe

  • 1 combine 1 cup of pepper jack cheese and next 4 ingredients; stir well, and set aside.
  • 2 position knife blade in food processor bowl; add garbanzo beans and garlic. process bean mixture 1 minute, or until smooth.
  • 3 add parsley sprigs, one half of the onion, lemon juice, and cumin; process 10 seconds or until onion is minced, scraping sides of processor bowl occasionally.
  • 4 place 4 tortillas on an ungreased baking sheet. spread each with one-eighth of bean mixture; top with one eighth of the cheese mixture. repeat with remaining tortillas, bean mixture, and cheese mixture, ending with the 4 remaining tortillas. sprinkle remaining 1/2 cup of pepper jack cheese evenly over the stacks.
  • 5 bake at 375° for 15 minutes or until thoroughly heated. cut each in half. garnish with the pepper rings, if desired. serve with red chile sauce.
  • 6 red chile sauce:.
  • 7 wash the chili; remove stem, seeds and veins. place chili in a bowl; add boiling water to cover. let stand 15 minutes or until chili is soft; drain and coarsely chop.
  • 8 position knife blade in the food processor bowl; add chili, onion, and garlic. pulse 4 or 5 times or until finely chopped. add tomatoes, cumin, and hot sauce; process 1 minute or until smooth. yield: 2 cups.

  • 1 small onion
  • 1 small zucchini
  • 1/4 lb swiss cheese
  • 1/4 lb smoked mozzarella cheese

  • 1 cut red pepper into 1/4-inch thick rings.
  • 2 thinly slice onion; dice zucchini.
  • 3 cut swiss and smoked mozzarella into 1-inch cubes.
  • 4 preheat oven to 425°f
  • 5 grease 10-inch round baking dish(at least 1-inch deep).
  • 6 in 10-inch skillet over medium heat, in hot butter, cook red pepper, onion, and zucchini until tender.
  • 7 with slotted spoon remove vegetable mixture to baking dish; top with cheese.
  • 8 in bowl, beat eggs and pepper until blended.
  • 9 pour egg mixture over ingredients in baking dish.

Baked Cheese Pastry Olives

Ingredients

  • 1 (30 count) jar queen pimento stuffed olives (i used publix brand, tall skinny jar)
  • 1/2 cup flour
  • 1/8 teaspoon cayenne pepper (i use more)
  • 2 tablespoons butter, softened
  • 4 ounces high quality extra-sharp cheddar cheese, shredded (preferably )
  • cold water

Recipe

  • 1 well before you plan to serve, drain olives in colander.
  • 2 mix flour and cayenne together.
  • 3 blend butter and cheese together with a fork.
  • 4 blend in flour mixture (i used a pastry blender, or you could use two knives).
  • 5 add cold water, a teaspoon or so at a time, until a dough forms.
  • 6 wrap a tablespoon or so of dough around each olive, and roll between palms; place on a cookie sheet.
  • 7 bake at 400 degrees fahrenheit for about 15 to 20 minutes, until golden brown.
  • 8 serve warm.
  • 9 hint: you can make these ahead according to the recipe and freeze. to reheat: place frozen olives on cookie sheet and bake about 10 minutes at 350 degrees fahrenheit.

Asparagus Potato Soup

  • 1 lb fresh asparagus, cut into one inch lengths
  • 1 large baking potato, peeled and cubed
  • 1 medium yellow onion, cut into wedges
  • 3 1/2 cups vegetable stock
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • salt and pepper
  • 6 tablespoons grated fresh parmesan cheese, for garnish

Recipe

  • 1 in a soup kettle, combine asparagus, potato, onion, stock, cinnamon, and nutmeg.
  • 2 bring to a boil, reduce to a simmer, cover lightly, and cook for 30 minutes, or until the vegetables are tender.
  • 3 remove from heat and cool slightly.
  • 4 pour batches of soup into blender and puree until smooth and return to the pot.
  • 5 return to a boil, salt and pepper to taste and remove from heat.
  • 6 serve immediately with parmesan for garnish.

Bitter Gourd In Tamarind Sauce

  • 400 g bitter melons
  • 2 tablespoons tamarind paste
  • 1 teaspoon black gram (de-skinned and split, aka urad daal)
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon mustard seeds
  • 4 pieces bird's eye chilies (cut into small pcs)
  • 10 pieces curry leaves
  • 1/2 teaspoon turmeric
  • 3/4 teaspoon salt
  • 2 tablespoons brown sugar
  • 2 teaspoons cooking oil

Recipe

  • 1 dice the bitter melon into small 1cm cube pcs. and keep aside.
  • 2 add the cooking oil to the wok and also the black gram, fenugreek seeds and mustard seeds.
  • 3 when the mustard seeds start to splutter, add the chilies and fry the chilies until they start browning.
  • 4 add the bitter melon and set the gas on medium fire.
  • 5 keep stirring so that the chilli induced oil spreads all over the bitter melon.
  • 6 add the turmeric, salt and the tamarind concentrate.
  • 7 add enough water to cover the ingredients and continue to cook on medium fire.
  • 8 when the bitter melon starts to soften, add the brown sugar and the curry leaves.
  • 9 once the sauce has thickened, it is ready to be served.
  • 10 this dish goes well with indian bread (roti/chapati) and also goes well with rice mixed with yoghurt.

Another Green Bean Casserole

  • 2 (15 ounce) cans green beans (not drained)
  • 1 onion, chopped
  • 1 (10 ounce) can cream of mushroom soup
  • 1/2-1 lb velveeta cheese (depends on how much cheese you like)
  • french-fried onions
  • salt, to taste
  • pepper, to taste

Recipe

  • 1 place the green beans and onion in a large saucepan.
  • 2 bring to a boil then lower temperature and simmer until about half of the liquid has evaporated.
  • 3 to the saucepan with the beans and liquid add the mushroom soup, cheese (start with 1/2 lb and add more later if it is not cheesy enough), salt and pepper.
  • 4 continue to simmer on low until the cheese melts.
  • 5 after the cheese melts taste to see if it needs more cheese if so add now, if not pour the mixture into a greased baking dish and cover and bake on 350º for 30 minutes or until bubbly.
  • 6 uncover and sprinkle french fried onions on top and place back in oven and bake until browned (about 5 minutes or so).
  • 7 let stand about 3 minutes before serving.

Recipe

  • 1 preheat oven to 400 degrees f.
  • 2 in a large pot of water, boil the sliced potatoes until they can be pierced easily with a fork.
  • 3 meanwhile, in a small bowl, stir together the bustard, beans, tomatoes, onion, and pepper, and set aside.
  • 4 drain the potatoes and place half of them into a lightly oiled casserole dish (2 1/2 qts). add half the bean mixture on top, then half the cheese. repeat.
  • 5 cover and bake for 35-40 minutes.

Absolutely Addicting "cheese Bread" Dessert

  • 4 pillsbury refrigerated crescent dinner rolls
  • 16 ounces philadelphia cream cheese (or 2 bars)
  • 3/4 cup sugar

  • 1 pre-heat oven to 325 degrees.
  • 2 first, make the batter by mixing your cream cheese, sugar, vanilla, and 1 egg together.
  • 3 on a medium cookie sheet, spread out 2 opened pillsbury rolls for bottom layer.
  • 4 pour batter on first layer, spread evenly (yum!) and don't forget about the corners!
  • 5 lay out remaining 2 pillsbury rolls for top layer. this part is pretty tricky but it doesn't have to look perfect to taste perfect.
  • 6 take 2nd egg, and brush it on top layer. i use the whole egg.
  • 7 bake on center rack at 325 degrees for 20 minutes. remove from heat before top gets too brown for best results.
  • 8 cut into squares, and serve!

  • 2 lbs lamb tenderloin, cut into 1 inch strips
  • red bell pepper, cut into 1 1/2 inch cubes

  • 1/2 cup water, boiling

  • 8 ounces fat-free cool whip, divided
  • 8 ounces shortbread pie crusts (9-inch pie size) or 8 ounces fat-free graham cracker crust (9-inch pie size)

  • 1 in a large bowl dissolve lemon jell-o in 1/2 cup of boiling water, stirring for about 2 minutes, until fully dissolved.

Recipe

  • 1 place cauliflower in a pan with milk, cream and bay leaf and simmer over low heat until tender. strain, reserving the milk mix and discarding only the bay leaf.
  • 2 wipe pan clean, return to heat and melt butter, add onion and cook over low heat for 5 minutes or until just softened then add the flour and cook for 1 minute, add stock and strained milk mix, stirring to combine.
  • 3 cook for 1-2 minutes over a low to medium heat or until slightly thickened.

  • 1/4 cup wine

Recipe

  • 1 place the lamb fillet into a shallow dish. brush with melted butter and sprinkle with dried sage and chopped garlic. pour the roasted garlic alfredo sauce over the meat, cover and refrigerate for four hours or preferably over night.
  • 2 cut each of the slices of bacon into halves lengthwise. plait these strips around the lamb in a criss-cross pattern. reserve the marinade for heating and serving with the lamb.
  • 3 cook the bacon wrapped lamb fillet on a heated barbecue on a medium heat for approximately 30 minutes or until the lamb is cooked through, turning halfway through cooking.
  • 4 place the remaining marinade into a small saucepan and bring to the boil. lower the heat, add 1/4 cup of wine and simmer for an extra minute and serve with the sliced lamb as a sauce.
  • 5 notes: the original recipe specified leggo's stir through sauce - roasted tomato & bacon, but zaar was unable to recognise this as an ingredient. the closest acceptable ingredient i could find was roasted garlic alfredo sauce. use whatever equivalent to one of these is available in your region. the lamb can be cooked in a conventional oven at 180ºc for 40 minutes or in an outdoor kettle oven following manufacturer's weight for cooking time.

  • 1 blanch asparagus pieces in large pot of boiling, salted water 2 minutes.

  • 3 rinse asparagus under cold water.

Bitter Marrow In Tamarind Sauce

  • 2 tablespoons brown sugar

  • 1 soak the tamarind in warm water and take out the pulp.
  • 2 cut the bitter marrow into 1cm cubes and set aside.
  • 3 cut the chillies into very small pieces and set aside.
  • 4 add olive oil onto wok. add the bitter marrow onto the olive oil and set the fire on simmer. add the turmeric powder.
  • 5 the bitter marrow will slowly cook and dehydrate in 15mts.
  • 6 add the chillies and mix well. the chillies will soften in 5 minutes.
  • 7 add the tamarind pulp, and add salt. add enough water to cover the ingredients in the wok and cook in a slow fire.
  • 8 after 15 minutes of simmerring, add the brown sugar and mix well.
  • 9 once the gravy reaches a consistency, add the hing (asefoetida) and mix well for couple of minutes more and take off fire.
  • 10 serve with rice or indian bread. can also be served as a pickle with curd-rice.
