Bite-sized Cherry Cheesecakes

Ingredients

• 36 vanilla wafer cookies
• 2 (8 ounce) packages cream cheese, softened
• 3/4 cup sugar
• 2 eggs
• 1 tablespoon lemon juice
• 1 teaspoon vanilla extract
• 1 (20 ounce) can cherry pie filling

Recipe

• 1 preheat oven to 375°f.
• 2 place liners in small muffin cup pan and place 1 vanilla waferin the bottom of each.
• 3 in a medium bowl, beat together cream cheese, sugar, eggs, lemon juice, and vanilla until fluffy.
• 4 fill muffin cups halfway with mixture.
• 5 bake 20 minutes.
• 6 cool and top with cherry filling.
