Apricot Chocolate Cookies

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • 3/4 cup unsalted butter or 3/4 cup margarine
  • 1 cup brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 egg
  • 1 2/3 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup chopped hazelnuts (optional)
  • 1 cup chopped dried apricot
  • 1 cup quality chocolate (or more, chopped into chunks)

Recipe

  • 1 preheat over to 350°f (or 175°c).
  • 2 in a large bowl, cream together the butter and brown sugar.
  • 3 beat in the egg and vanilla.
  • 4 mix in the flour, baking soda and salt.
  • 5 add the nuts, apricots and chocolate.
  • 6 spoon onto an ungreased cookie sheet and bake for 8 to 12 minutes. (these cookies don't spread very much, so they can be pretty closely packed onto the cookie sheet).
  • 7 transfer to a cooling rack.
