Apricot Chocolate Cookies

Ingredients
- 3/4 cup unsalted butter or 3/4 cup margarine
- 1 cup brown sugar
- 1 1/2 teaspoons vanilla extract
- 1 egg
- 1 2/3 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup chopped hazelnuts (optional)
- 1 cup chopped dried apricot
- 1 cup quality chocolate (or more, chopped into chunks)
Recipe
- 1 preheat over to 350°f (or 175°c).
- 2 in a large bowl, cream together the butter and brown sugar.
- 3 beat in the egg and vanilla.
- 4 mix in the flour, baking soda and salt.
- 5 add the nuts, apricots and chocolate.
- 6 spoon onto an ungreased cookie sheet and bake for 8 to 12 minutes. (these cookies don't spread very much, so they can be pretty closely packed onto the cookie sheet).
- 7 transfer to a cooling rack.
