Almost Fat-free Vegetarian Butternut Squash Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 cups vegetable broth (may substitute water)
  • 1 lb butternut squash (half of a medium-sized squash)
  • 1 small zucchini
  • 1/2 cup red lentil
  • 1/2 red bell pepper
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon nutmeg
  • black pepper

Recipe

  • 1 remove seeds, peel, and cut the squash into small 1 inches cubes.
  • 2 cut the zucchini and bell pepper into small chunks.
  • 3 put all ingredients except spices into a 2 quart saucepan, and bring to a boil.
  • 4 simmer, covered, on low heat for 30 minutes (the lentils will split--this is normal and you may use this as an indication that all of the ingredients are cooked).

  • 1 teaspoon almond extract
  • 2 cups all-purpose flour

  • 1 1/2 teaspoons almond extract

Recipe

  • 1 in a large mixing bowl, cream butter and sugar.
  • 2 beat in almond extract.
  • 3 combine the flour, baking powder and salt; gradually add to creamed mixture.
  • 4 roll into 1 inch balls.

Almond-stuffed Peaches

Ingredients

  • 4 firm fresh peaches
  • 1/4 cup toasted blanched almond, finely ground
  • 1/3 cup amaretti cookie, ground
  • 2 teaspoons sweet wine
  • 1 egg yolk
  • 2 tablespoons unsalted butter

  • 1 preheat oven to 375°f
  • 2 cut peaches in half and remove the pit. remove a little of the pulp from the center of each peach half to create a slightly larger cavity, reserving the removed pulp.
  • 3 put the peach halves in a casserole dish skin-down.
  • 4 mash the removed pulp in a bowl. add the almonds, ameretti cookies, egg yolk, and wine. mix well.
  • 5 fill each peach half with a spoonful of the almond mixture. cut a piece of the butter and place it on top of the filling. bake for 25-30 minutes until the filling is golden-brown and the peaches are tender but still firm.

  • 1 cup apple cider
  • 1 cup dry wine
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 dash ground cloves

  • 3 granny smith apples, peeled, cored, and quartered
  • 3 braeburn apples, peeled, cored, and quartered
  • 3 inches cinnamon sticks
  • 1/2 cup half-and-half

  • 1 preheat oven to 375 degrees f.
  • 2 to prepare croutons, slice cake crossways into 8 (1/2 inch) slices; reserve remaining cake for another use.

  • 1 cut each potato into 8 wedges. you can use peeled or unpeeled potatoes.
  • 2 melt butter with crushed garlic, place into a bowl.
  • 3 add wedges to butter in the bowl and mix until all wedges are coated with the garlic butter.
  • 4 add 1/8 cup butter and 1/8 cup olive oil to a large baking dish.
  • 5 add wedges to large baking dish.

  • 2 eggs

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 ounces almond paste
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, room temperature
  • 1 egg
  • 1/3 cup milk
  • 1/2 teaspoon vanilla
  • 1 egg , beaten
  • 1/4 cup raspberry preserves, strained
  • vegetable oil (for frying)
  • 1/2 cup whipping cream
  • 3 tablespoons sugar
  • 1/4 teaspoon vanilla
  • 1/2 cup strained raspberry preserves
  • 1 1/2 teaspoons kirsch or 1 1/2 teaspoons framboise liqueur or 1 1/2 teaspoons brandy or 1 1/2 teaspoons orange juice

  • 1 in medium bowl, stir together flour, baking powder and salt.
  • 2 in large bowl, combine almond paste and 1/2 cup sugar; mix at low speed to break up almond paste into tiny pieces. add butter; beat at medium speed 3 minutes or until fluffy. add egg; beat until blended. at low speed, add milk and vanilla; beat until blended.
  • 3 stir in flour mixture. (dough will be very soft and sticky.) cover; let stand 20 minutes.

  • 8 in small saucepan, combine 1/2 cup preserves, kirsch and water. heat until melted and smooth, stirring occasionally.
  • 9 to serve, place 3 doughnuts on each dessert plate. spoon whipped cream on plate beside doughnuts. drizzle raspberry mixture over doughnuts and cream. serve immediately. refrigerate any leftover whipped cream.
  • 10 tip *strain raspberry preserves through fine strainer to remove seeds. you may use seedless raspberry preserves, but the color and flavor are better in the regular preserves.

Baked Vidalia Onions With Blue Cheese

  • 3 large vidalia onions, peeled or 3 large other sweet onions
  • 8 ounces blue cheese, crumbled
  • 1 tablespoon milk
  • 3 tablespoons butter, softened

  • 1/4 teaspoon black pepper

  • 1 preheat oven to 400. lightly grease a 13 x 9 baking dish set aside.
  • 2 slice the onions lengthwise into about 8 wedges each and put in the 9 x 13-inch baking dish.
  • 3 in a bowl, combine the blue cheese, milk, butter, worcestershire, parsley, and pepper. spoon over onions.
  • 4 bake at 400 for about 30 minutes or until brown and bubbly.

Beer Chicken

  • 3 lbs chicken
  • 2 tablespoons butter
  • 4 small onions
  • 2 tablespoons flour
  • 12 fluid ounces beer
  • 3 tablespoons chicken bouillon
  • 1 cup boiling water
  • 1 tablespoon fresh parsley
  • 1 tablespoon fresh chives

Recipe

  • 1 clean the chicken and cut it in 8 pieces.
  • 2 fry them on butter and add the onion until gold.
  • 3 add the flour and the chicken bouillon together with water.
  • 4 when everything is boiling add the beer and the greens.
  • 5 cover it and let it simmer for 45 minutes or until the chicken is tender.
  • 6 serve.

  • 1 cup almonds
  • 7 tablespoons butter (100 g)
  • 1/3 cup sugar (75 g)
  • 1 egg
  • 1 1/3 cups flour

Beered Up Cabbage

Ingredients

  • Servings: 6
  • 8 slices bacon, cut into 1/8 ths
  • 1 small onion, sliced (more if desired)
  • 1/2 large green cabbage, cored and sliced
  • 1 (12 ounce) can beer
  • 1 -2 tablespoon caraway seed (according to taste)
  • 3 tablespoons prepared yellow mustard
  • 2 tablespoons sugar
  • salt and pepper (to taste)

Recipe

  • 1 in a large skillet, fry bacon until it is almost crisp.
  • 2 add onion slices and saute until onion is tender.
  • 3 do not drain the bacon grease unless there is too much.
  • 4 add cabbage and stir until cabbage is well coated with the bacon mixture.
  • 5 pour beer into a 2 cup measuring cup add caraway seeds, mustard, sugar, salt and pepper and stir until well mixed.

Beer Cheese Broccoli (and Chicken) Soup

  • 1 (16 ounce) jar ragu double cheese sauce
  • 1 (16 ounce) jar ragu classic alfredo sauce
  • 1/2 small onion, chopped
  • 2 stalks celery, chopped

  • 12 ounces beer
  • 2 cups milk

  • 10 medium potatoes, mashed
  • 1/4 lb butter
  • 1 tablespoon salt
  • 1 tablespoon chopped onion
  • 1 cup scalded milk
  • 1 (8 ounce) package cream cheese, softened
  • paprika

Recipe

  • 1 cook and mash potatoes.
  • 2 add all ingredients except cream cheese.
  • 3 mix in cream cheese last.
  • 4 place in greased casserole (2 qt).
  • 5 sprinkle with paprika.
  • 6 place in refrigerator overnight.
  • 7 remove from fridge for an hour or two.
  • 8 bake @ 350 for 30-40 minute.

Beer-brined Grilled Lamb Chops

Ingredients

  • Servings: 4
  • 2 cups water
  • 2 cups dark lager beer
  • 1/4 cup coarse salt
  • 3 tablespoons packed dark brown sugar
  • 3 tablespoons mild-flavored molasses (light)
  • 1 cup ice cube
  • 6 center-cut lamb chops, 1-1/4-inch thick
  • 7 large garlic cloves, minced
  • 3 teaspoons fresh coarse ground black pepper
  • 2 teaspoons salt
  • 2 teaspoons dried sage

Recipe

  • 1 combine 2 cups water, beer, 1/4 cup coarse salt, sugar, and molasses in large bowl.
  • 2 stir until salt and sugar dissolve.
  • 3 stir in ice.
  • 4 place lamb chops in large resealable plastic bag.
  • 5 pour beer brine over lamb chops; seal bag.
  • 6 refrigerate 4 hours, turning bag occasionally.
  • 7 prepare barbecue (medium-high heat). remove lamb chops from beer brine; pat dry.
  • 8 mix garlic, pepper, 2 teaspoons salt, and sage in small bowl.
  • 9 rub garlic mixture over both sides of lamb chops.

  • 1 tablespoon light brown sugar
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon allspice
  • 2 eggs
  • 1/2 cup skim milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup gluten-free flour, sited
  • 1/8 teaspoon salt
  • 1 tablespoon canola oil
  • 2 apples, peeled and sliced very thin
  • 1 tablespoon lemon peel
  • 1 tablespoon nuts (optional)

  • 1 preheat oven to 400°f.
  • 2 place 0-inch pie pan in oven to warm.
  • 3 in a small bowl, combine the brown sugar, nutmeg, and half of the cinnamon: set aside.

  • 1/2 cup skim milk powder
  • 2 teaspoons baking soda

  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 2 large eggs
  • 1 3/4 cups unsweetened applesauce

  • 1 preheat oven to 350°f (180°c). spray 8â€? x 8â€? (20cm x 20cm) square pan with non-stick cooking spray.

Baked Yellow Squash Casserole

Ingredients

  • 8 medium yellow squash, sliced
  • 1 medium onion, chopped
  • 4 slices cooked and crumbled bacon
  • 1/4 cup melted butter
  • 2 eggs, beaten
  • 1 cup evaporated milk
  • 1 tablespoon sugar
  • 1 cup ritz cracker crumbs
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 dash hot sauce (or two or three dashes)

  • 1 cook squash and onion in a small amount of boiling water until squash is tender; drain well.

B & B Homemade Granola

Ingredients

  • 2 cups oats
  • 1/3 cup brown sugar
  • 1 1/4 teaspoons ground allspice
  • 1 teaspoon cinnamon
  • 1/4 cup butter
  • 2 tablespoons honey
  • 1/4 cup chopped pecans

Recipe

  • 1 combine oats, brown sugar, pecans and spices in a medium bowl.
  • 2 melt butter and honey in a small saucepan and pour over oat mixture.
  • 3 spread granola over lightly greased cookie sheet.
  • 4 cook for about 35 minutes at 300, stirring several times, careful not to let cereal burn.

Baked Veggie Spring Rolls

Ingredients

  • Servings: 4
  • 2 tablespoons reduced sodium soy sauce
  • 1/2 teaspoon grated peeled gingerroot
  • 1/2 teaspoon packed light brown sugar
  • 1/2 teaspoon salt
  • 1 minced garlic clove, to taste
  • 1/3 cup cooked rice noodles (also known as cellophane noodles, and i sometimes use more and pack 'em in!)
  • 1 green onion, julienned (scallion)
  • 1 carrot, finely grated
  • 1 red bell pepper, seeded and julienned
  • 1/2 green bell peppers (i prefer the yellow) or 1/2 yellow bell pepper, seeded and julienned (i prefer the yellow)
  • 1/4 cup finely shredded cabbage or 1/4 cup julienned cabbage
  • 1 cup trimmed snow pea pods, julienned
  • 1 cup bean sprouts
  • 1/4 cup water chestnut, julienned
  • 4 (7 inch) square egg roll wraps
  • 2 teaspoons olive oil or 2 teaspoons vegetable oil
  • 1 teaspoon sesame oil or 1 teaspoon toasted sesame oil
  • hot chinese mustard (and or or, not necessarily one or the other) or plum sauce, for garnish (and or or, not necessarily one or the other)

Recipe

  • 1 preheat the oven to 375 degrees f. spray a cooking sheet with non-stick cooking spray, or line with parchment.
  • 2 in a large bowl, combine the soy sauce, ginger, brown sugar, salt, and minced garlic. add the rice noodles, green onion, carrot, bell peppers, cabbage, snow peas, bean sprouts, and water chestnuts; toss to coat. place the egg roll wrappers on a clean dry work surface. divide the mixture evenly among the wrappers; fold in the ends and roll up jelly roll fashion.
  • 3 combine the olive or vegetable oil and sesame oil. lightly brush each spring roll with oil mixture and place on the prepared baking sheet.
  • 4 bake at 375 degrees f until the spring rolls are crisp on the bottoms; about 10 minutes; turn and bake until crisp all over, about 7 to 10 more minutes.
  • 5 serve with mustard or plum sauce if desired. if you can't get egg roll wrappers, you can also use phyllo sheets.

Recipe

  • 1 cream 3/4 cup butter and sugar; beat in egg yolk and extracts, mixing well.
  • 2 blend in flour and salt.
  • 3 spread dough evenly onto bottom of ungreased 13x9x2-inch baking pan.
  • 4 bake at 350°f for 25 minutes or until golden brown.
  • 5 melt chocolate in double boiler over simmering water.

  • 1 preheat oven to 350 degrees.
  • 2 place the raisins in a bowl and toss them with 2 tablespoons of the flour until lightly coated.
  • 3 beat the eggs and sugar until fluffy.
  • 4 with the mixer running, slowly pour in the oil.
  • 5 one by one, mixing well after each addition, add the remaining flour, salt, baking soda, cinnamon, cloves, allspice, and vanilla.

Barberry Jam

  • 3 lbs barberries
  • 2 cups cold water
  • 1 cup sugar, per cup of juice pulp

Recipe

  • 1 place fully ripened and cleaned fruit into a saucepan and add 2 cups of water.
  • 2 cook the mixture slowly over a medium heat till the fruit softens.
  • 3 when cooked through, remove from heat and pass mixture through a fine sieve or strainer to remove the skins and seeds.
  • 4 measure the pulp mixture and place into a saucepan with 1 cup sugar for each cup of pulp.
  • 5 mix well and bring to a boil.
  • 6 hold the boil for 15 minutes while stirring constantly.
  • 7 skim off the foam and pour into hot sterile jelly jars and seal while hot.

Almond-raspberry Croissant Breakfast Pudding

  • 6 plain croissants, cut into 1/2 inch pieces
  • 3 tablespoons butter, cut into bits
  • 5 tablespoons raspberry jam
  • 2 tablespoons amaretto or 2 tablespoons water

  • 3 cups milk
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 7 ounces almond paste, crumbled
  • 1/2 cup sliced almonds

Recipe

  • 1 toast sliced almonds in a skillet over medium heat till pale golden and fragrant.
  • 2 set aside.
  • 3 butter a 13-inch by 9-inch by 2-inch baking dish.
  • 4 put in croissants to cover bottom of baking dish and dot with bits of butter.
  • 5 thin raspberry jam with amaretto or water and drizzle over the croissants.
  • 6 beat eggs, milk, sugar and extracts for at least 3 minutes; pour over croissants.
  • 7 sprinkle almond paste and almonds to cover the top (in the overnight recipe, i sprinkle the toasted almonds on the following morning, just before baking).
  • 8 allow to 'sit' for 1/2 an hour to 40 minutes for croissants to absorb custard.
  • 9 preheat oven to 350f.
  • 10 bake for 35 to 40 minutes, until a knife inserted in center comes out clean.
  • 11 let cool 10 minutes before cutting in.

Barbie Birthday Cake

  • 1 cup water
  • 1/3 cup oil
  • 3 eggs
  • 2 (16 ounce) cans frosting
  • 2 tablespoons candy sprinkles

  • 1 you must also have a barbie doll for this recipe, but i could not include it in the ingredients list as it is a non-food item.
  • 2 preheat oven to 350 degrees farenheit.
  • 3 grease and flour a an 8 cup rounded glass measuring cup, or you can use a metal mixing bowl.
  • 4 prepare cake mix by adding first 4 ingredients and mixing for 2 minutes.
  • 5 pour cake mix into prepared measuring cup (or metal mixing bowl, and bake 50-60 mins until knife inserted in center comes out clean.
  • 6 let cool for 15 mins, then invert onto cake tray.
  • 7 let cool completely before frosting, about 3 hours.
  • 8 after completely cool use frosting to decorate cake to look like barbie's dress.
  • 9 insert barbie legs all the way down into middle of the cake, then use remaining frosting to cover her bosoms to complete the dress.

Apple Spice Dutch Oven Coke Cake

Ingredients

  • 1 (18 ounce) box spice cake mix, you will not need ingredients on back of box just use dry
  • 2 (20 ounce) cans apple pie filling
  • 1 (12 ounce) can coke
  • 1/4 cup margarine or 1/4 cup butter, melted
  • 1/4 cup brown sugar
  • 1 (8 ounce) container cool whip, i use the cool whip in a spray can

Recipe

  • 1 start burning 21 briquettes for a 10" dutch oven, if u are using a bigger oven you will need to add more *remember always have more on top then bottom when baking*.
  • 2 pour melted margarine or butter in dutch oven, if you have no way to melt it just cut into pieces and place around bottom evenly.
  • 3 sprinkle brown sugar evenly over butter.
  • 4 add both cans of apple pie filling.
  • 5 open cake mix and add it (dry) on top of pie filling.
  • 6 pour can of coke over cake mix.
  • 7 i always lightly stir in coke to the cake mix after pouring (be careful not to mix in apples) but this step is not necessary.
  • 8 cover with lid.
  • 9 put 8 briquettes on bottom of dutch oven and 13 on top, this should equal about 350 degrees for a 10" dutch oven.
  • 10 bake for about 50 min to an hour, or until toothpick comes out clean when inserted in the middle.
  • 11 scoop out heaping servings and top with cool whip, we use the cool whip in the spray can.
  • 12 enjoy!

Beer-braised Chicken

  • 1/4 lb bacon
  • 8 boneless skinless chicken thighs (i used chicken breasts)
  • 1 tablespoon extra virgin olive oil
  • 12 ounces dark beer (i used guiness)
  • 1 cup frozen pearl onions
  • 1/2 lb baby red potato, sliced in half
  • 2 tablespoons whole grain mustard
  • 2 tablespoons dark brown sugar, packed
  • 4 sprigs fresh thyme
  • 3 tablespoons chopped fresh parsley
  • kosher salt and pepper
  • flour (for dredging)

Recipe

  • 1 heat a large pot over med high heat.
  • 2 add bacon (slab or thick, cut into 1/2 inch pieces) and cook until browned, about 5 minutes.
  • 3 remove with a slotted spoon and transfer to a paper lined plate.
  • 4 season the chicken with salt and pepper and dredge in flour, shake off excess.
  • 5 add olive oil to the dripppings in the pot.
  • 6 add the chicken in batches and cook over med high heat until browned on all sides (you should cook thighs the recommended 6 to 7 minutes then flip and cook the other side 1 or 2 minutes.) the chicken breast cooked much quicker, i was done after approx 5 minutes.
  • 7 after the chicken is all cooked add the beer, onions, potatoes, mustard, sugar, thyme and 1 cup water, making sure the chicken is fully submerged.
  • 8 simmer until potatoes and chicken are cooked through (approx 15 minutes.).
  • 9 discard thyme and stir in the bacon and parsley.

  • 4 with electric mixer, beat dry ingredients, 1 cup at a time, alternating with the applesauce mixture.beat for 2 minutes after last addition.

  • 1 tablespoon garlic salt

  • 2 tablespoons wheat germ
  • 1/2 teaspoon salt

  • 1 preheat oven to 375°f shred vegetables on a course grater or in a food processor. squeeze as much moisture as possible from zucchini.

Baked Veggie Casserole

Ingredients

  • 2 cups eggplants, cubed
  • 2 cups zucchini, sliced 1/4 inch thick
  • 1/2 large bell pepper, cut into strips

  • 1 stir onion, garlic, oregano into sauce. set aside.
  • 2 place all vegetables in glass baking dish.
