Baked Veggie Frittata

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 1 medium chopped zucchini
  • 1 chopped bell pepper
  • 2 cups spinach
  • 1 cup chopped mushroom
  • 1 chopped tomato
  • 1/4 cup thinly sliced vidalia onion
  • 1/2 cup reduced-fat feta cheese
  • 2/3 cup low fat cottage cheese
  • 1 (16 ounce) carton egg beaters egg substitute
  • 2 tablespoons reduced-fat parmesan cheese

Recipe

  • 1 preheat oven to 375. chop all vegetables and put in a bowl. season with salt and pepper (or other seasoning) to taste. add egg beaters, then feta and cottage cheese. mix well.
  • 2 coat baking dish with cooking spray. pour mixture into dish. top with parmesan cheese. bake for 45 minutes or until lightly brown on top.
