Baked Veggie Frittata

Ingredients
- 1 medium chopped zucchini
- 1 chopped bell pepper
- 2 cups spinach
- 1 cup chopped mushroom
- 1 chopped tomato
- 1/4 cup thinly sliced vidalia onion
- 1/2 cup reduced-fat feta cheese
- 2/3 cup low fat cottage cheese
- 1 (16 ounce) carton egg beaters egg substitute
- 2 tablespoons reduced-fat parmesan cheese
Recipe
- 1 preheat oven to 375. chop all vegetables and put in a bowl. season with salt and pepper (or other seasoning) to taste. add egg beaters, then feta and cottage cheese. mix well.
- 2 coat baking dish with cooking spray. pour mixture into dish. top with parmesan cheese. bake for 45 minutes or until lightly brown on top.
