Almond-coconut Bars

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup lightly packed brown sugar
  • 1/2 cup margarine
  • 2 large eggs
  • 1/2 cup sugar
  • 1/2 cup corn syrup
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3/4 cup coarsely chopped almonds
  • 1/2 cup unsweetened coconut

Recipe

  • 1 crust: mix flour and sugar.
  • 2 cut in the margarine until mixture resembles coarse crumbs.
  • 3 press firmly into a greased and floured 9 inch square cake pan.
  • 4 bake at 375°f for 15 minutes.
  • 5 topping: combine eggs, sugar, surup, butter, vanilla, cinnamon, and nutmeg, and beat together.
  • 6 stir in the nuts and coconut.
  • 7 spread evenly over the crust.
  • 8 bake for 20-25 minutes or until set and golden.
  • 9 cool thoroughly before cutting.
