Baked Veggie Casserole

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 cups eggplants, cubed
  • 2 cups zucchini, sliced 1/4 inch thick
  • 1/2 large bell pepper, cut into strips
  • 1/2 cup chopped onion
  • 1/2 cup sliced mushrooms
  • 2 teaspoons minced garlic
  • 1 1/2 cups tomato sauce
  • 1/2 teaspoon cumin
  • 1/2 teaspoon curry powder
  • 1 teaspoon oregano
  • salt and pepper

Recipe

  • 1 stir onion, garlic, oregano into sauce. set aside.
  • 2 place all vegetables in glass baking dish.
  • 3 pour sauce over vegetables.
  • 4 sprinkle cumin, curry powder, salt, and pepper over casserole.
  • 5 bake for 25-30 minutes, or until veggies are soft.
