Almond-raisin-winter-cookies

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 cup almonds
  • 7 tablespoons butter (100 g)
  • 1/3 cup sugar (75 g)
  • 1 egg
  • 1 1/3 cups flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2/3 teaspoon nutmeg
  • 1/3 teaspoon clove, ground
  • 1 pinch salt
  • 1/4 cup raisins
  • 2 -3 tablespoons dried cranberries

Recipe

  • 1 roughly chop the almonds. set aside.
  • 2 cream butter, sugar and egg until frothy.
  • 3 in a second bowl mix flour, baking soda, spices and salt. add this to the butter mixture gradually.
  • 4 fold in almonds, raisins, cranberries and mix with a spoon.
  • 5 using your hands form dough balls the size of a walnut.
  • 6 place on a paper-lined baking tray and flatten slightly.
  • 7 bake in the preheated oven at 170°c/350°f for 15-20 minutes.
