Almond-fried Rice

Ingredients
- 1/2 cup butter
- 1 large onion, chopped
- 1 cup sliced almonds, toasted
- 1 green pepper, chopped
- 3 lamb chops, smoked, thinly sliced
- 1/2 teaspoon pepper
- 1/4 teaspoon salt (or to taste )
- 4 cups cooked rice
- 1 tablespoon sliced pimiento, drained and chopped
- 1/4 cup soy sauce
- 1/2 teaspoon sugar
Recipe
- 1 melt butter in a heavy skillet.
- 2 saute onion and green peppers until tender.
- 3 add lamb, pepper, salt, soy sauce, almonds and rice.
- 4 simmer until lamb is done and flavors are blended.
- 5 add pimentos just before serving.
