Almond-fried Rice

Total Time: 1 hr Preparation Time: 25 mins Cook Time: 35 mins

Ingredients

  • 1/2 cup butter
  • 1 large onion, chopped
  • 1 cup sliced almonds, toasted
  • 1 green pepper, chopped
  • 3 lamb chops, smoked, thinly sliced
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt (or to taste )
  • 4 cups cooked rice
  • 1 tablespoon sliced pimiento, drained and chopped
  • 1/4 cup soy sauce
  • 1/2 teaspoon sugar

Recipe

  • 1 melt butter in a heavy skillet.
  • 2 saute onion and green peppers until tender.
  • 3 add lamb, pepper, salt, soy sauce, almonds and rice.
  • 4 simmer until lamb is done and flavors are blended.
  • 5 add pimentos just before serving.
