Baked Yellow Squash Casserole

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 8 medium yellow squash, sliced
  • 1 medium onion, chopped
  • 4 slices cooked and crumbled bacon
  • 1/4 cup melted butter
  • 2 eggs, beaten
  • 1 cup evaporated milk
  • 1 tablespoon sugar
  • 1 cup ritz cracker crumbs
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 dash hot sauce (or two or three dashes)
  • 1 teaspoon worcestershire sauce

Recipe

  • 1 cook squash and onion in a small amount of boiling water until squash is tender; drain well.
  • 2 place squash and onions in a food processor and and process until smooth.
  • 3 combine squash mixture and remaining ingredients; mix well and spoon into a lightly greased 2 quart casserole.
  • 4 bake uncovered for 35 mins at 350 degrees.
