Baked Oatmeal With Dried Fruit

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 2 cups old fashioned oats
  • 1 1/2 cups 2% low-fat milk
  • 1/2 cup egg substitute
  • 1/2 cup agave syrup
  • 1 teaspoon baking powder
  • 1 tablespoon coconut oil
  • 1/2 teaspoon cinnamon
  • 1 cup dried mixed fruit
  • 1/2 cup walnuts

  • 1 directions.
  • 2 preheat oven to 350°f.
  • 3 in a small bowl mix the milk, agave syrup, egg substitute, coconut oil and cinnamon together.
  • 4 in a larger bowl combine the oats, (chopped)dried fruit, (chopped)walnuts and the baking powder.
  • 5 pour the wet mixture into the bowl with the oats and mix well.
  • 6 spoon the mixture into a 8 x 8 inch pan coated with cooking spray and bake for 30-40 minutes, until top is firm and a toothpick comes out clean in the center.

  • 1/2 cup oat flour
  • 1/2 cup splenda sugar substitute, for baking

Blueberry Chocolate Coffee Cake

  • 1 1/2 cups sugar
  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 4 eggs
  • 3 cups all-purpose flour
  • 2 cups chocolate chips
  • 1 (21 ounce) can blueberry pie filling
  • 1 cup powdered sugar
  • 4 ounces cream cheese, at room temperature
  • 1 -2 tablespoon heavy cream or 1 -2 tablespoon milk

Recipe

  • 1 heat oven to 350 degrees f. line jelly roll pan, 15-1/2 x 10-1/2 x 1 inch, with non-stick foil or generously grease the pan.
  • 2 beat sugar, margarine, shortening, baking powder, vanilla, almond extract and eggs in large bowl on low speed, scraping bowl constantly.

  • 7 drizzle glaze over warm coffee cake. serve warm or let stand until cool. store in a covered container.
  • 8 for the glaze, mix ingredients until smooth and of drizzling consistency. use a zip-top baggie with a tiny corner cut off as a container and drizzle a wiggly pattern over the top of the coffeecake. 36 servings.

Autumn Celebration Baked Oatmeal

Ingredients

  • 1 1/2 cups rolled oats, not the quick-cook oatmeal
  • 1 cup steel cut oats
  • 1/2 cup brown sugar (i use less sometimes depending on the fruits added)
  • 1 teaspoon cinnamon
  • 1/4-1/2 teaspoon powdered ginger
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups milk (i use almond milk)
  • 2 eggs
  • 2 teaspoons vanilla
  • 3 tablespoons butter, melted (i use earth balance spread for lactose free)
  • 1/2 cup squash (canned or roasted and mashed)
  • 3/4 cup golden raisin
  • 1/2 cup pumpkin seeds, also called pepitas
  • 2 teaspoons crystallized ginger, chopped

Recipe

  • 1 preheat oven to 350 degrees butter an 8x8 square baking dish.
  • 2 in a small mixing bowl, combine both types of oatmeal, sugar, cinnamon, powdered ginger, raisins, pepitas, baking soda, and salt.
  • 3 in another larger bowl combine milk, butter, eggs, vanilla, crystallized ginger and squash. add in the oatmeal mixture and stir to combine well. if it sets for very long, be sure to stir again before pouring into baking dishes since the steel cut oats will settle to the bottom.
  • 4 pour into prepared pan. bake 30-35 minutes, or until the center is set and the outsides pull slightly away from the pan.
  • 5 serve warm with a little milk over top. refrigerate leftovers for a healthy breakfast tomorrow!

Blueberry Waffles With Blueberry-orange Sauce

Ingredients

  • 1/4 cup butter, melted
  • 3 tablespoons sugar
  • 3 egg yolks
  • 1 2/3 cups milk
  • 2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon lemon extract (optional)
  • 3 egg whites
  • 1/2 cup blueberries
  • 2 cups blueberries
  • 1/4 cup sugar
  • 1/2 cup orange juice
  • 1 1/2 tablespoons cornstarch, mixed with water to make a paste

Recipe

  • 1 melt the butter in a medium bowl. whisk in the sugar, yolks, milk, flour, baking powder, salt and lemon extract until smooth. set aside for 30 minutes.
  • 2 beat the egg whites until stiff. fold into the yolk mixture along with the 1/2 cup blueberries.
  • 3 use 2/3 cup batter in a greased belgian waffle maker or follow waffle maker directions.
  • 4 to make the sauce: combine the blueberries, sugar and orange juice in a saucepan. bring to a boil, then simmer 2 minutes. add the cornstarch paste and simmer another 1-2 minutes, stirring constantly, until thickened.

  • 2 mix sugar with berries.

  • 6 sprinkle berries over top.
  • 7 bake 40 minutes in 425 degree oven.

Berry Strata

Ingredients

  • 2 tablespoons butter
  • 3 tablespoons honey
  • 4 large eggs
  • 1/2 cup whole milk ricotta cheese
  • 3 tablespoons sugar
  • 1 cup whole milk
  • 1/4 cup orange juice
  • 4 slices bread, torn into 1-inch pieces (about 4 cups)
  • 1 (10 ounce) bag frozen mixed berries, thawed and drained

Recipe

  • 1 melt the butter in a small saucepan over low heat. turn off the heat, add the honey, and stir to combine.
  • 2 meanwhile, in a large bowl combine the eggs, ricotta, and sugar. using a fork, mix to combine and beat the eggs. add the milk, orange juice, butter and honey mixture, and bread. stir to combine. gently fold in the berries.
  • 3 place the ingredients in a 10-inch round (2-quart) baking dish. cover with plastic wrap and place in the refrigerator for at least 2 hours and up to 12 hours.
  • 4 preheat the oven to 350 degrees f. bake the strata until golden on top and baked through, about 40 minutes. let stand for 5 minutes before serving. spoon into dishes and serve.

All Bran Banana Bread

  • 1 cup all-bran cereal
  • 3/4 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1/4 cup 1% low-fat milk or 1/2 teaspoon powdered dry milk
  • 1/2 cup caster sugar
  • 1 egg
  • 2 tablespoons water
  • 1 cup mashed banana (approx 2 bananas)

Recipe

  • 1 preheat oven to 180 degree c.
  • 2 combine dry ingredients and add egg, water, milk and banana.
  • 3 mix until well combined.
  • 4 spoon into a greased loaf tin.
  • 5 bake in oven for 30-45 minutes or until cooked when tested.
  • 6 note- the original recipe says to cook for 45 minutes but mine was done at 30 minutes, so i suggest testing at 30 minutes so it dosn't overcook.

Autumn Apple Strudel

Ingredients

  • Servings: 8
  • 1 (17 1/3 ounce) package pepperidge farm puff pastry (both sheets)
  • 3 teaspoons ener-g egg substitute
  • 2 tablespoons water (to mix with the egg substitute)
  • 4 tablespoons granulated sugar (i used the pure cane sugar)
  • 2 tablespoons spelt flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon ground ginger (optional)
  • 4 large granny smith apples (if you can't find large use 8 small)
  • 4 tablespoons dried cherries (chopped medium)
  • 2 tablespoons vanilla extract
  • 1 lemon, zest of
  • 2 tablespoons confectioners' sugar

Recipe

  • 1 set the oven to 375'f.
  • 2 put a silpat sheet on a 12" x 16" baking pan. set aside.
  • 3 take out your puff pastry and let it thaw for about 37 minutes.
  • 4 prepare the egg substitute and set aside.
  • 5 in a small bowl mix the sugar, lemon zest, flour and spices.
  • 6 add it to the apples and then add the dried cherries. add in the vanilla and with your hands give everything a good toss making sure you coat all the apples with the sugar, flour, vanilla and spices.
  • 7 lightly flour your counter top and roll the thawed puff pastry into a 12"x16" rectangle.
  • 8 take 1/2 of the apple mixture and lay it on the long side of the puff pastry sheet and roll it away from yourself. tuck in the edges. repeat for the second puff pastry sheet.
  • 9 set them on the prepared baking pan leaving a space between as they will spread. brush with your egg replacer. using a pair of scissors cut 4 slices in the top of the strudel to allow the steam to escape.
  • 10 bake for 25-30 minutes until the strudels are a light golden brown and the apple juice is flowing out the bottom.
  • 11 i brushed the juice on top of the strudel. don't want to waste it.
  • 12 at this point you can sprinkle the strudel with your confectioners sugar.
  • 13 bon appetit!

Blueberry Tea Cake

Ingredients

  • blueberry tea cake
  • 1 cup whole milk
  • 3 tea bags, orange spice
  • 2 cups all-purpose flour, sifted
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup vegetable shortening
  • 1 1/4 cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries, room temperature

Recipe

  • 1 in a small saucepan, heat milk just to the simmer.
  • 2 off heat, add the teabags, submerging them completely. set mixture aside to cool. when cool, remove teabags, squeezing them to remove liquid.
  • 3 adjust rack to lower third of oven and preheat oven to 350 degrees. grease and flour a 9-inch square cake pan.
  • 4 sift the flour, baking powder, and salt.
  • 5 using an electric mixer at medium speed, cream the shortening and the sugar to blend thoroughly. add the egg and vanilla and beat until light and fluffy, about 4 minutes.
  • 6 add the flour mixture alternately with the steeped tea-flavored milk mixture in three or four additions.
  • 7 fold in blueberries and spoon batter into pan. bake for 25 to 30 minutes or until cake springs back when lightly pressed in center. cool on wire rack 10 minutes before inverting.

  • 4 tablespoons butter, melted
  • 1/3 cup packed light brown sugar
  • 3 tablespoons light-brown sugar
  • 1 1/2 cups blueberries
  • 3/4 cup cake flour (not self-rising)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/4 cup milk, room temperature

Recipe

  • 1 heat oven to 350°.
  • 2 butter a 1-quart 5 1/2-inch-diameter soufflé dish.
  • 3 pour 2 tablespoons melted butter into the soufflé dish.
  • 4 sprinkle 3 tablespoons brown sugar over butter.
  • 5 scatter 1 cup blueberries over sugar. set aside.
  • 6 in a medium bowl, whisk together flour, baking powder, and salt.

Alina's Spinach Porridge

Ingredients

  • Servings: 4
  • 1 kg frozen spinach (you could use fresh one too)
  • 1 tablespoon flour
  • 1 cup water
  • 1 teaspoon salt
  • 8 eggs (two per person)
  • 150 ml vegetable oil
  • 1 pinch paprika
  • 1 cup plain yogurt

Recipe

  • 1 heat the oil and add the spinach and the salt.
  • 2 fry that while mixing constantly 15-20 minute.
  • 3 add the diluted flour in water and leave to simmer for 20 more minutes, mixing from time to time.
  • 4 divide the spinach porridge in four plates and add on top of it two fried eggs in each plate ( more or less by request ) and season with paprika.

Basil Vinegar Chicken

  • 1 onion, finely chopped
  • 1/4 cup butter
  • 4 boneless skinless chicken breasts
  • 1/2 cup basil flavored vinegar
  • 1 cup sour cream

Recipe

  • 1 sauté onion in butter till translucent.
  • 2 add 4 skinned chicken breasts and sauté over low heat till the chicken is done.
  • 3 remove chicken to a plate and keep warm.
  • 4 add vinegar to the pan and simmer for bout 5 minutes to reduce the sauce.
  • 5 add sour cream and heat through.
  • 6 pour sauce over chicken breasts on serving platter and serve.

  • 1/2 cup granulated sugar

  • 3 eggs, separated
  • 1 2/3 cups milk
  • 2 cups flour
  • 2 1/4 teaspoons baking powder

  • 1 1/2 cups blueberries
  • 3 tablespoons honey
  • 1/2 cup orange juice, divided
  • 1 tablespoon cornstarch

Recipe

  • 1 heat waffle iron.
  • 2 separate eggs into one bowl for whites, one for yolks.
  • 3 to start the batter: whisk milk into the egg yolks, then add the flour, baking powder and the salt. whisk them together then add the butter and whisk until batter is just smooth then stop. set aside to rest while completing the next steps.
  • 4 put the 1 1/2 cup blueberries in a saucepan with the honey and 1/4 cup of the orange juice.
  • 5 mix the 1 tbs of cornstarch in the other 1/4 cup of orange juice.
  • 6 bring the sauce to a boil, then add the orange juice/cornstarch while whisking constantly. continue to whisk until it thickens to a thick syrup like sauce.

Apple Crisp

  • 4 cups granny smith apples, peeled and sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon juice
  • 1/2 cup all-purpose flour
  • 1 1/4 cups old fashioned oats
  • 2/3 cup light brown sugar, packed
  • 1 1/4 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ginger

  • 1 place apples in greased 8-inch square baking dish and toss with the lemon juice.

  • 3 large baking apples, peeled, cored, and sliced
  • 1 cup firmly packed dark brown sugar
  • 2 tablespoons dark corn syrup
  • 1 teaspoon ground cinnamon
  • 3 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • french bread, cut into 1-inch thick slices

Recipe

  • 1 the day before serving - prepare apples and french toast: in large heavy skillet, melt butter over medium heat. add apple slices and cook; stirring occasionally, until tender.
  • 2 add brown sugar, corn syrup, and cinnamon to apples. cook, stirring, until brown sugar dissolves.
  • 3 spray 9 x 13 baking pan with non-stick spray and spread apple mixture into an even layer.

  • 2 lbs baby carrots (or 2 lbs peeled and sliced carrots)
  • 2 cups peeled diced potatoes (about 1 large potato)
  • 2 medium apples, peeled, cored and sliced
  • 1 cup chopped onion
  • 1 celery rib, chopped
  • 1/2 cup apple juice
  • 1/2 cup wine (or use another 1/2 cup apple juice or grape juice)
  • 3 1/2 cups vegetable broth (or chicken broth)
  • 1/4-1/2 teaspoon salt, to taste
  • 1/4 teaspoon pepper
  • 1/2 teaspoon thyme
  • 3/4 teaspoon tarragon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon brown sugar
  • 1 cup shredded extra-sharp cheddar cheese
  • 1 cup light sour cream

Recipe

  • 1 place carrots, potatoes, apples, onion and celery in a large soup pot. add juice, wine, and broth and bring to a boil. cook/simmer for about 15-20 minutes or until carrots are very tender.
  • 2 stir in salt, pepper, thyme, tarragon, nutmeg and brown sugar.
  • 3 remove from heat and puree (in batches) in a food processor or blender.
  • 4 return pureed soup mixture to pot and place on med-low heat. stir in shredded cheese and sour cream. stir often, until cheese is melted and soup is heated through.

Aliya's Grilled Cheese Eggs Benedict

  • 8 add egg mixture slowly, stirring continuously until sauce has thickened, immediately remove from heat, do not overcook. before serving, add 1/2 t salt & fresh ground nutmeg. i sometimes add a little more lemon juice because i like mine very lemony. set aside as you finish the rest.
  • 9 to make the eggs: in a small pan melt 3 t of butter (or so) & approximately 4 t. of water until slightly bubbling, add 4 remaining eggs, cover with a tight fitting lid, & cook (over medium heat), until they are to your liking, (i cook mine until they are over-easy, & yolks are still runny). if you find that all the water has not evaporated when your eggs are just about right, take the lid off for the last moment or two of cooking.
  • 10 in the meantime, while you cook the eggs:.
  • 11 return bread to the large pan, (over medium heat), place bread, cooked side up, (to grill the 2nd side), placing the cheese, & ham on cooked side, cover.

Basil Stuffed Shells

Ingredients

  • 1 cup basil, finely chopped
  • 2 eggs, beaten well
  • 2 cups ricotta cheese
  • 2 cups parmesan cheese, freshly grated
  • 1 teaspoon nutmeg, freshly grated
  • 1 teaspoon salt
  • 20 large pasta shells
  • 2 cups tomato sauce

Recipe

  • 1 mix the beaten eggs with the ricotta, parmesan and basil.
  • 2 add seasonings and adjust to taste.
  • 3 cook large pasta shells in 6 quarts boiling water till just tender. drain and rinse in cold water.
  • 4 stuff each shell with about 3 tbsp of filling and place in a casserole dish.
  • 5 top with tomato sauce.
  • 6 bake in a preheated 375° oven for about 25 minutes.

Blueberry Yogurt Muffins

Ingredients

  • 1 cup unbleached all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 pinch ground cloves
  • 1/4 cup canola oil
  • 1 cup plain yogurt
  • 2 large eggs
  • 2/3 cup frozen blueberries, lightly thawed

Recipe

  • 1 line a texas muffin pan with 6 liners.
  • 2 mix the dry ingredients together first in a large bowl.
  • 3 in another bowl, mix the wet ingredients together with a whisk.
  • 4 fold the wet ingredients into the dry mixture and whisk until just combined and there are no more dry spots but don't overmix.
  • 5 you can use fully thawed blueberries but i think they come out better if they're still frozen-- either way make sure you blot them with paper towels to remove excess moisture before you whisk them into the batter.
  • 6 fill each paper about halfway or a little less.
  • 7 bake 25-30 minutes at 350f or until browned on top.

  • 2 1/2 cups all-purpose flour
  • 2 cups granny smith apples, chopped
  • 1/3 cup sugar
  • 6 tablespoons butter
  • 1 tablespoon baking powder
  • 2 tablespoons coarse sugar
  • 1/4 teaspoon salt
  • 1/2 cup whipping cream

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 mix flour, 1/3 cup sugar, baking powder and salt.
  • 3 cut in 4 tbsp butter til mixture resembles to coarse crumbs.
  • 4 place 2 tbsp butter in a saucepan and cook apples until tender and liquid is reduced.
  • 5 stir often and let cool, then mix the whipping cream in.
  • 6 add apple mixture into flour mixture and stir until dough clings together.
  • 7 on a lightly floured board, knead 6 times.
  • 8 on an ungreased baking sheet, pat dough down into an 8 inch circle.

Apple Crisp

  • 6 cups sliced peeled apples
  • 1/4 cup sugar
  • 2 tablespoons lemon juice
  • 3/4 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1 teaspoon ground cinnamon
  • 1/3 cup butter or 1/3 cup margarine

Recipe

  • 1 preheat oven to 350°f.
  • 2 place apples in a buttered 2-quart casserole dish.
  • 3 sprinkle with sugar and lemon juice.
  • 4 in a small bowl, combine rolled oats, brown sugar, flour and cinnamon.
  • 5 using a pastry blender, cut butter into mixture until the mixture is crumbly.
  • 6 sprinkle over the apples.
  • 7 bake for 40 minutes or until apples are tender.

Berry-cherry-banana Shortcake

  • butter-flavored cooking spray
  • 3/4 cup all-purpose flour
  • 3 tablespoons all-purpose flour
  • 1/2 cup whole wheat pastry flour

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 lightly mist 11-inch-by-7-inch glass baking dish with spray.
  • 3 combine flours, sugar, baking powder, salt and baking soda with pastry blender or fork.
  • 4 cut in the butter until crumbly.
  • 5 add buttermilk.
  • 6 stir with a fork until sticky.
  • 7 on a lightly floured surface with lightly floured hands, knead dough gently, adding as little flour as possible, until a ball forms.
  • 8 pat into a 1/2-inch thick rectangle.
  • 9 using a floured 3-inch round biscuit cutter, cut out 6 biscuits.
  • 10 transfer to the prepared dish, placing about 3/4-inch apart.
  • 11 beat egg with 1 t water and lightly brush on to the top of each biscuit.
  • 12 bake 13-15 minutes, or until lightly golden on top.
  • 13 cool on rack 3 minutes.

  • 3 cups rolled oats (not the quick cooking oatmeal variety)
  • 1 1/4 teaspoons baking powder
  • 1 -2 tablespoon cinnamon
  • 2 cups powdered milk
  • 3/4 cup unsweetened applesauce
  • 1 cup plain vanilla yogurt
  • 1 teaspoon vanilla
  • 6 ounces frozen unsweetened cherries (1/2 package, or combo of both) or 6 ounces unsweetened frozen cranberries (1/2 package, or combo of both)

  • 1 preheat oven to 375 degrees.
  • 2 spray a 8x8 baking pan with cooking spray (like pam).
  • 3 mix everything together pour into baking pan.
  • 4 bake 30-45 minutes check after 30 minutes break crust with fork if middle soupy put back in oven for an additional 5-15 minutes checking after 5 minutes. the outside will become dry quickly so you want the middle more soupy than you would think.

  • 2 eggs, slightly beaten

Recipe

  • 1 butter 1 1/2 quart casserole.
  • 2 in medium saucepan, bring water to boiling.
  • 3 slowly stir in oats.

  • 1 tablespoon sugar

Recipe

  • 1 preheat oven to 325°f.
  • 2 lightly butter the sides and bottom of a 2-quart baking dish or 10-11 inch pie plate.

  • 1 large egg, separated
  • 1/4 cup sugar
  • 1 tablespoon sugar
  • 1 sheet frozen puff pastry, thawed

Recipe

  • 1 heat oven to 400°f have a baking sheet ready.
  • 2 stir cream cheese, egg yolk, and 1/4 cup sugar until blended. slightly beat the egg in a small bowl.
  • 3 place puff pastry lengthwise in center of baking seet and unfold. with a rolling pin, roll out to a 12-in-long rectangle. spoon cheese filling in 2 1/2-inch wide strip down center.
  • 4 on both sides of filling, cut 1-inch wide strips from filling to edge. fold strips at an angle across filling, overlapping and alternating from side to side. brush with egg ; sprinkle with remaining 1 tbsp sugar.
  • 5 bake 25 minutes until puffed and golden. cool slightly on sheet on a wire rack. serve warm or at room temperature.
