Blueberry Tea Cake

Ingredients
- 1 egg, beaten
- 2/3 cup sugar
- 1 1/2 cups cake flour, sifted
- 1/2 teaspoon cinnamon
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/3 cup milk
- 3 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 2 tablespoons sugar
Recipe
- 1 preheat oven to 400 degrees, then grease a 1 1/2 quart shallow baking dish.
- 2 in a medium bowl with a wooden spoon, beat egg.
- 3 gradually beat in 2/3 cup sugar; beat until combined.
- 4 sift together flour, baking powder, cinnamon and salt.
- 5 add to sugar mixture alternately with milk- beat well after each addition.
- 6 add butter and vanilla; beat thoroughly.
- 7 fold in the blueberries.
- 8 pour batter into prepared pan and sprinkle top with 2 tablespoons sugar.
- 9 bake for 25 minutes or until top springs back when lightly touched.
- 10 serve warm with butter.
