Autumn Oatmeal Muffins

Ingredients
- 2 cups quick oats
- 1 cup whole wheat flour
- 1 cup unbleached flour
- 3/4 cup sucanat or 3/4 cup brown sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon clove
- 2 cups low-fat milk
- 2 eggs, beaten
- 1/4 cup unsweetened applesauce
- 2 tablespoons olive oil
- 1 cup dried currant (optional)
Recipe
- 1 stir together dry ingredients.
- 2 make well in center; add milk, eggs, applesauce, oil, and currants (if using) and stir to combine.
- 3 spoon into greased muffin cups and bake at 375 degrees for 15-25 minutes, until muffins test done.
- 4 remove from pan and cool on rack.
