Autumn Oatmeal Muffins

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 2 cups quick oats
  • 1 cup whole wheat flour
  • 1 cup unbleached flour
  • 3/4 cup sucanat or 3/4 cup brown sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon clove
  • 2 cups low-fat milk
  • 2 eggs, beaten
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons olive oil
  • 1 cup dried currant (optional)

Recipe

  • 1 stir together dry ingredients.
  • 2 make well in center; add milk, eggs, applesauce, oil, and currants (if using) and stir to combine.
  • 3 spoon into greased muffin cups and bake at 375 degrees for 15-25 minutes, until muffins test done.
  • 4 remove from pan and cool on rack.
