Basil Lamb Chops

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 lean center-cut lamb chops (1 1/4 lbs)
  • 1 teaspoon dried basil
  • 1 teaspoon fresh coarse ground black pepper
  • 1/2 teaspoon salt
  • 1 cup v8 vegetable juice

Recipe

  • 1 trim and discard excess fat from chops.
  • 2 in a large frying pan, brown chops without added fat.
  • 3 when chops are browned, add other ingredients.
  • 4 cover tightly and simmer 40 minutes or until tender.
  • 5 turn meat occasionally and add a few tablespoons of water if necessary to prevent burning.
