Berry Soy Muffins

Ingredients

- 1 1/2 cups whole wheat flour
- 1/2 cup oat flour
- 1/2 cup splenda sugar substitute, for baking
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 egg
- 3/4 cup light vanilla soymilk
- 1/4 cup unsweetened applesauce
- 1 teaspoon lemon zest
- 1 teaspoon vanilla
- 1 cup frozen berries
Recipe
- 1 preheat oven to 375.
- 2 in bowl ,whisk together flour through salt.
- 3 in second bowl, whisk egg, egg , soy milk, applesauce, and vanilla, add zest.
- 4 pour into dry ingredients.
- 5 stir until just mixed.
- 6 spoon batter into muffin tins sprayed with cooking spray.
- 7 bake for 20 to 22 minutes.
