Berry Soy Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups whole wheat flour
  • 1/2 cup oat flour
  • 1/2 cup splenda sugar substitute, for baking
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 egg
  • 3/4 cup light vanilla soymilk
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla
  • 1 cup frozen berries

Recipe

  • 1 preheat oven to 375.
  • 2 in bowl ,whisk together flour through salt.
  • 3 in second bowl, whisk egg, egg , soy milk, applesauce, and vanilla, add zest.
  • 4 pour into dry ingredients.
  • 5 stir until just mixed.
  • 6 spoon batter into muffin tins sprayed with cooking spray.
  • 7 bake for 20 to 22 minutes.
