Country Yellow Squash Bake

Ingredients
- Servings: 6
- 10 large yellow squash, cut into pieces
- 1/2 cup onion, chopped
- 1 (8 ounce) carton sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon dried basil
- 1/8 teaspoon ground red pepper
- 1 cup soft breadcrumbs
- 1/2 cup cheddar cheese, shredded
- 1/4 cup butter, melted
- 1/2 teaspoon paprika
Recipe
- 1 cook squash and onion in boiling water 10 or 15 minutes or until tender. drain well, and mash.
- 2 combine squash mixture, sour cream, salt, dried basil and red pepper, stirring well.
- 3 spoon mixture into a greased 2 quart casserole.
- 4 combine breadcrumbs, cheddar cheese, margarine and paprika and toss well. sprinkle over squash mixture.
- 5 bake, uncovered, at 300 degrees for 30 minutes or until thoroughly heated.
