Autumn Pumpkin Waffles

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 tablespoon cinnamon
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 4 eggs, separated
  • 1 1/2 cups milk
  • 1 cup canned pumpkin
  • 1/2 cup vegetable oil
  • 1/4 cup butter, melted
  • 1 tablespoon vanilla extract

Recipe

  • 1 combine flour, baking powder, spices and salt in a large batter bowl; set aside.
  • 2 using a medium sized bowl slightly beat egg yolks; whisk in milk, pumpkin, oil, butter and vanilla.
  • 3 add pumpkin mixture to flour mixture, stirring to combine.
  • 4 in a small bowl, beat egg whites until stiff peaks form, gently fold into pumpkin mixture.
  • 5 bake in preheated, lightly oiled waffle baker according to manufacturers instructions.
  • 6 i have a small waffle baker and this makes about 14 waffles.
