Autumn Pumpkin Waffles

Ingredients
- 2 cups all-purpose flour
- 2 tablespoons baking powder
- 1 tablespoon cinnamon
- 1/2 teaspoon ground coriander
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 4 eggs, separated
- 1 1/2 cups milk
- 1 cup canned pumpkin
- 1/2 cup vegetable oil
- 1/4 cup butter, melted
- 1 tablespoon vanilla extract
Recipe
- 1 combine flour, baking powder, spices and salt in a large batter bowl; set aside.
- 2 using a medium sized bowl slightly beat egg yolks; whisk in milk, pumpkin, oil, butter and vanilla.
- 3 add pumpkin mixture to flour mixture, stirring to combine.
- 4 in a small bowl, beat egg whites until stiff peaks form, gently fold into pumpkin mixture.
- 5 bake in preheated, lightly oiled waffle baker according to manufacturers instructions.
- 6 i have a small waffle baker and this makes about 14 waffles.
