Barberry Jam

Total Time: 1 hr Preparation Time: 1 hr

Ingredients

  • 3 lbs barberries
  • 2 cups cold water
  • 1 cup sugar, per cup of juice pulp

Recipe

  • 1 place fully ripened and cleaned fruit into a saucepan and add 2 cups of water.
  • 2 cook the mixture slowly over a medium heat till the fruit softens.
  • 3 when cooked through, remove from heat and pass mixture through a fine sieve or strainer to remove the skins and seeds.
  • 4 measure the pulp mixture and place into a saucepan with 1 cup sugar for each cup of pulp.
  • 5 mix well and bring to a boil.
  • 6 hold the boil for 15 minutes while stirring constantly.
  • 7 skim off the foam and pour into hot sterile jelly jars and seal while hot.
