Banana Bran Muffins

Ingredients
- 1 cup all-purpose flour, sifted
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon nutmeg
- 2 tablespoons brown sugar
- 1 cup wheat bran
- 1 egg
- 2 bananas (ripe ones, mashed)
- 1/3 cup canola oil
- 1/4 cup golden syrup
- 1/2 cup skim milk
- 1/2 teaspoon vinegar
Recipe
- 1 preheat oven to 400°f
- 2 sift and measure flour.
- 3 sift flour with baking powder, baking soda and nutmeg. add brown sugar and bran.
- 4 beat egg into mashed banana, then combine with remaining liquid ingredients.
- 5 combine with dry ingredients with a few swift strokes.
- 6 fill lined muffin tins 2/3 full.
- 7 bake at 400f, 25-30 minutes.
