Applesauce Bran Muffins

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 1 1/2 cups wheat bran
  • 1 cup low-fat milk
  • 1/2 cup unsweetened applesauce
  • 1 egg
  • 2/3 cup brown sugar
  • 1/2 teaspoon vanilla essence
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup frozen blueberries (or a berry mix)

Recipe

  • 1 preheat oven to 180 degrees celsius.
  • 2 lightly grease muffin tins with butter paper.
  • 3 mix together wheat bran and milk, and let stand for 10 minutes.
  • 4 in a large bowl, mix together applesauce, egg, brown sugar, and vanilla and beat in bran and milk mixture.
  • 5 sift together flour, baking soda, baking powder and salt, stir into bran mixture until just blended.
  • 6 fold in blueberries and scoop into muffin tin, making each about 3/4 full.
  • 7 bake for 15 to 20 minutes, until tops look crispy and golden.
