Bengaladumpa Vepudu (potato Stir-fry)

Ingredients

  • Servings: 4
  • 1/4 cup cooking oil
  • 4 dried hot red chili peppers
  • 1 tablespoon cumin seed
  • 2 teaspoons black lentils, skinned split (urad dal)
  • 1/2 teaspoon mustard seeds
  • 1 sprig fresh curry leaf
  • 1 lb potato, peeled and cubed
  • salt
  • 1/2 teaspoon ground red pepper
  • 1/2 teaspoon ground cumin

Recipe

  • 1 heat the oil in a large skillet.
  • 2 fry the dried red chile peppers, cumin seeds, urad dal, and mustard seeds in the hot oil until the seeds begin to splutter.
  • 3 add the curry leaves and continue cooking another 30 seconds.
  • 4 stir the potatoes into the mixture.
  • 5 season with salt.
  • 6 cook and stir until the potatoes are tender, about 20 minutes.
  • 7 sprinkle the red pepper and cumin powder over the potatoes; cook another 2 to 3 minutes.
