Corn Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 2/3 cups yellow cornmeal
  • 1 1/3 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tablespoons baking powder
  • 2 teaspoons salt
  • 2 cups milk
  • 1/2 cup butter, melted
  • 1 cup chopped green onion

Recipe

  • 1 preheat oven to 425 degrees f.
  • 2 grease a 12-cup muffin tin.
  • 3 in a big mixing bowl, combine dry ingredients.
  • 4 in another bowl, combine milk with butter.
  • 5 add milk and butter mix to the cornmeal mixture, whisking gently until just combined.
  • 6 toss in green onions.
  • 7 spoon batter into muffin cups and bake for 20-30 minutes, until golden brown.
