Corn Muffins

Ingredients
- 2 2/3 cups yellow cornmeal
- 1 1/3 cups all-purpose flour
- 1/2 cup sugar
- 2 tablespoons baking powder
- 2 teaspoons salt
- 2 cups milk
- 1/2 cup butter, melted
- 1 cup chopped green onion
Recipe
- 1 preheat oven to 425 degrees f.
- 2 grease a 12-cup muffin tin.
- 3 in a big mixing bowl, combine dry ingredients.
- 4 in another bowl, combine milk with butter.
- 5 add milk and butter mix to the cornmeal mixture, whisking gently until just combined.
- 6 toss in green onions.
- 7 spoon batter into muffin cups and bake for 20-30 minutes, until golden brown.
