Corn Fritters

Ingredients
- Servings: 4
- 2 eggs
- 1 cup flour
- 2 teaspoons baking powder
- 8 ounces creamed corn
- 1/4 cup sugar
- sugar, to dust for serving
- oil (for frying)
Recipe
- 1 combine first five ingredients in a large bowl, and mix well.
- 2 heat oil in frying pan.
- 3 drop tablespoons full of batter into oil.
- 4 turn when light-golden brown.
- 5 drain on paper towel.
- 6 if you are making a double batch, keep cooked fritters warm in the oven.
- 7 dust with sugar to serve.
- 8 serve with "apple and sausage toss".
