Corn Fritters

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 eggs
  • 1 cup flour
  • 2 teaspoons baking powder
  • 8 ounces creamed corn
  • 1/4 cup sugar
  • sugar, to dust for serving
  • oil (for frying)

Recipe

  • 1 combine first five ingredients in a large bowl, and mix well.
  • 2 heat oil in frying pan.
  • 3 drop tablespoons full of batter into oil.
  • 4 turn when light-golden brown.
  • 5 drain on paper towel.
  • 6 if you are making a double batch, keep cooked fritters warm in the oven.
  • 7 dust with sugar to serve.
  • 8 serve with "apple and sausage toss".
