Corn Maque Choux

Ingredients

  • Servings: 8
  • 6 ears fresh corn
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 garlic cloves, minced
  • 2 fresh tomatoes, seeded and chopped
  • salt
  • cayenne pepper
  • 2 tablespoons milk (optional)

Recipe

  • 1 clean and shuck corn. cut the kernels from the cob into a bowl using a sharp knife.
  • 2 scrape the pulp from the cobs into the bowl, this making the "milk".
  • 3 melt the butter in a large skillet.
  • 4 add onion, bell pepper, and garlic; saute for 5 minute.
  • 5 stir in the tomatoes and the corn.
  • 6 season with salt and pepper.
  • 7 simmer uncovered, for 45 min, stirring occasionally.
  • 8 stir in the "milk" if the mixture becomes too dry or begins to stick to the skillet.
