Corn Maque Choux

Ingredients

- 6 ears fresh corn
- 2 tablespoons butter
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 garlic cloves, minced
- 2 fresh tomatoes, seeded and chopped
- salt
- cayenne pepper
- 2 tablespoons milk (optional)
Recipe
- 1 clean and shuck corn. cut the kernels from the cob into a bowl using a sharp knife.
- 2 scrape the pulp from the cobs into the bowl, this making the "milk".
- 3 melt the butter in a large skillet.
- 4 add onion, bell pepper, and garlic; saute for 5 minute.
- 5 stir in the tomatoes and the corn.
- 6 season with salt and pepper.
- 7 simmer uncovered, for 45 min, stirring occasionally.
- 8 stir in the "milk" if the mixture becomes too dry or begins to stick to the skillet.
