Ingredients
- 2 1/2 cups corn kernels
- 2 eggs, beaten
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 1 1/2 teaspoons table salt
- peanut oil, for frying
Recipe
- 1 stir corn into eggs. sift together dry ingredients and stir into wet ingredients.
- 2 heat peanut oil, 3" deep in pot, to 375°f drop mixture by tablespoons into oil. fry 5-8 minutes until golden brown, turning over once.
