Berry Angel Whip

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 pint fresh berries (strawberries, blueberries, raspberries, blackberries)
  • 1 cup sugar
  • 2 tablespoons cornstarch, dissolved in
  • 1/4 cup cold water
  • 3 egg whites
  • 3/4 cup sugar

Recipe

  • 1 place mixing bowl and beaters in freezer.
  • 2 put washed berries in a medium saucepan with 1 cup sugar.
  • 3 cook over medium hear, mashing and stirring occasionally.
  • 4 when hot add dissolved cornstarch.
  • 5 cook until liquid is transparent and thickens.
  • 6 remove from heat and let cool.
  • 7 remove bowl and beaters from freezer.
  • 8 combine egg whites and 3/4 cup sugar in chilled bowl and beat on high with electric mixer.
  • 9 when soft peaks form add berries.
  • 10 mix on low until blended.
  • 11 pour mixture over individual cake slices of choice to serve.
