Berry Breakfast Power Bar

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 16
  • 250 g dessert apples, chopped
  • 30 ml lemon juice
  • 150 g soft margarine (olive or vegetable)
  • 75 g dark brown sugar
  • 75 g golden syrup
  • 325 g oats
  • 15 g oat bran
  • 25 g ground flax seeds
  • 40 g dried cranberries
  • 20 g dried blueberries
  • 20 g sesame seeds
  • 30 g sunflower seeds
  • 50 g brazil nuts (shaved)

Recipe

  • 1 bring apples to boil, then simmer for 10 minutes until soft.
  • 2 melt margarine, sugar & syrup in a large saucepan, then remove from heat.
  • 3 add berries to hot mixture to allow time to plump up.
  • 4 add all other ingredients. mix well.
  • 5 pat into 30cm x 20cm (12" x 8")pan.
  • 6 bake @ 180c for 25 minutes.
  • 7 allow to cool for 15mins before cutting and removing from pan onto cooling rack.
