Baked Sweet Potato Pineapple

• 6 medium sweet potatoes
• 1/4 cup butter
• 2 eggs
• 2 teaspoons finely grated orange peel (optional)
• 1 (8 1/4 ounce) can pineapple chunks, drained
• orange slice (optional)

Recipe

• 1 cook sweet potatoes in boiling salted water for 30 to 40 minutes or until tender; drain and peel. beat potatoes and butter until fluffy. beat in eggs, orange peel, and 3/4 teaspoons salt. stir in pineapple. turn in 1 quart casserole. cover and bake in 325 oven about 45 minutes or until heated through. garnish with orange slices.
