Baked Parsnips

Ingredients
- Servings: 6
- 2 1/2 lbs parsnips
- 2 ounces butter or 2 ounces bacon fat
- 3 tablespoons stock
- salt and pepper
- 1 pinch nutmeg
Recipe
- 1 pre-heat oven to 375°f (or whichever temperature you need to cook your meat).
- 2 peel parsnips, quarter, and remove any woody core.
- 3 parboil for 15 minutes.
- 4 place in an ovenproof dish. add stock and sprinkle with salt, pepper and nutmeg. dot with butter and bake for 30 minutes on a low shelf in a moderate oven.
