Banana Protein Muffins

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 12
  • 12 egg whites
  • 2/3 cup uncooked oatmeal
  • 2/3 cup fiber one cereal
  • 2 bananas
  • 6 tablespoons jam (no or low sugar)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 6 g stevia plus (6 packets)
  • 1 ounce chopped pecans

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 mix everything except the cereal and nuts in a blender. (note: recipe does not state exact amount of cinnamon or vanilla - 1/2 teaspoon is a guesstimate).
  • 3 fold in the cereal and mix well.
  • 4 line a muffin tin with aluminum cupcake liners and spray with non-stick cooking spray.
  • 5 pour the muffin batter evenly into each tin and top with the nuts.
  • 6 bake for 30 minutes.
