Banana Protein Muffins

Ingredients
- Servings: 12
- 12 egg whites
- 2/3 cup uncooked oatmeal
- 2/3 cup fiber one cereal
- 2 bananas
- 6 tablespoons jam (no or low sugar)
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 6 g stevia plus (6 packets)
- 1 ounce chopped pecans
Recipe
- 1 preheat oven to 350 degrees.
- 2 mix everything except the cereal and nuts in a blender. (note: recipe does not state exact amount of cinnamon or vanilla - 1/2 teaspoon is a guesstimate).
- 3 fold in the cereal and mix well.
- 4 line a muffin tin with aluminum cupcake liners and spray with non-stick cooking spray.
- 5 pour the muffin batter evenly into each tin and top with the nuts.
- 6 bake for 30 minutes.
