Bacon-wrapped Lamb Tenderloin

Ingredients
- Servings: 4
- 1 (1 lb) lamb tenderloin
- 3/4 teaspoon kosher salt
- 3/4 teaspoon black pepper
- 4 sprigs fresh thyme
- 4 slices bacon
- 1 tablespoon olive oil
- 2 small fennel bulbs, cut into eighths
- 8 dried apricots, cut in half
Recipe
- 1 heat oven to 400 degrees.
- 2 pat the lamb dry with paper towels.
- 3 season with 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper.
- 4 top the lamb with the thyme and wrap it with the bacon.
- 5 heat the oil in a large cast-iron skillet over medium-high heat.
- 6 add the lamb and fennel.
- 7 season with the remaining salt and pepper.
- 8 cook the lamb for 2 minutes per side.
- 9 add the apricots.
- 10 transfer skillet to oven and roast for 20 to 25 minutes.
- 11 let rest for 5 minutes.
- 12 slice the lamb and serve with the fennel and apricots.
