Bacon-wrapped Lamb Tenderloin

Total Time: 48 mins Preparation Time: 8 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 (1 lb) lamb tenderloin
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon black pepper
  • 4 sprigs fresh thyme
  • 4 slices bacon
  • 1 tablespoon olive oil
  • 2 small fennel bulbs, cut into eighths
  • 8 dried apricots, cut in half

Recipe

  • 1 heat oven to 400 degrees.
  • 2 pat the lamb dry with paper towels.
  • 3 season with 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper.
  • 4 top the lamb with the thyme and wrap it with the bacon.
  • 5 heat the oil in a large cast-iron skillet over medium-high heat.
  • 6 add the lamb and fennel.
  • 7 season with the remaining salt and pepper.
  • 8 cook the lamb for 2 minutes per side.
  • 9 add the apricots.
  • 10 transfer skillet to oven and roast for 20 to 25 minutes.
  • 11 let rest for 5 minutes.
  • 12 slice the lamb and serve with the fennel and apricots.
