Badam Kheer (almond Pudding)

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 5
  • 1 cup almonds, blanched and peeled
  • 5 cups milk
  • 1/2 cup sugar
  • 2 -3 green cardamoms, husk removed and seeds crushed
  • 1 teaspoon saffron

Recipe

  • 1 shred 1/4 almonds into thin strips (optional) and grind the rest into a smooth paste using some of the milk.
  • 2 bring the rest of the milk to a boil and simmer till 2/3 of the volume remains.
  • 3 add the almond paste, sugar, cardamom powder and saffron. simmer on low heat for 2-3 minutes, stirring occasionally.
  • 4 transfer to serving dish and chill.
  • 5 garnish with some of the shredded almond strips and serve.
