Badam Kheer (almond Pudding)

Ingredients

- 1 cup almonds, blanched and peeled
- 5 cups milk
- 1/2 cup sugar
- 2 -3 green cardamoms, husk removed and seeds crushed
- 1 teaspoon saffron
Recipe
- 1 shred 1/4 almonds into thin strips (optional) and grind the rest into a smooth paste using some of the milk.
- 2 bring the rest of the milk to a boil and simmer till 2/3 of the volume remains.
- 3 add the almond paste, sugar, cardamom powder and saffron. simmer on low heat for 2-3 minutes, stirring occasionally.
- 4 transfer to serving dish and chill.
- 5 garnish with some of the shredded almond strips and serve.
