1796 Cranberry Ketchup

Ingredients
- 1 lb cranberries
- 1/2 cup onion, finely chopped
- 1/2 cup water
- 1/2 cup apple cider
- 1 cup sugar
- 1/4 teaspoon cinnamon, ground
- 1/4 teaspoon salt
- 1/4 teaspoon celery seed
- 1/2 teaspoon black pepper
Recipe
- 1 wash the cranberries.
- 2 in a large saucepan combine the cranberries with the onion & water & bring to a boil.
- 3 reduce the heat to low,cover and simmer for 10 minuites.
- 4 puree the cranberry mixture,return to the saucepan and add the remaining ingredients.
- 5 bring to a boil and cook uncovered for 15 minuites until most of the liquid is evaporated.
- 6 continue stirring and don't allow the mixture to scorch.
- 7 adjust the seasoning with salt and black pepper according to taste.
