Bacon Popovers

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 4 slices bacon, diced
  • 1 tablespoon butter
  • 2 eggs, beaten
  • 1 cup milk
  • 1 tablespoon bacon drippings
  • 1 cup flour

Recipe

  • 1 preheat oven to 400 degrees f.
  • 2 cook bacon until crisp.
  • 3 drain, reserving 1 tablespoon drippings.
  • 4 using 1/2 teaspoon butter for each cup, grease the bottom and sides of six cups of a popover or muffin pan.
  • 5 mix eggs, milk, and oil or bacon drippings.
  • 6 add flour and bacon and beat until mixture is smooth.
  • 7 fill the prepared cups half full.
  • 8 bake for about 40 minutes or until very firm.
  • 9 remove popovers from oven and prick with a fork.
  • 10 serve hot.
