Artichoke-blue Cheese Bisque

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 tablespoon butter
  • 1 onion, chopped
  • 1/3 cup vermouth
  • 2 (8 ounce) packages frozen artichoke hearts
  • 3 cups low sodium chicken broth
  • 1/4 teaspoon dried thyme
  • 1/4 cup whipping cream
  • 1/4 cup crumbled blue cheese (about 2 ounces)
  • chopped fresh chives

Recipe

  • 1 melt butter in heavy large saucepan over medium heat.
  • 2 add onion and sauté until translucent, about 10 minutes.
  • 3 add vermouth and simmer until all liquid evaporates, about 4 minutes.
  • 4 add artichokes, broth, and thyme.
  • 5 simmer until artichoke hearts begin to fall apart, about 10 minutes.
  • 6 remove from heat.
  • 7 cool slightly.
  • 8 working in batches, puree soup in blender until smooth.
  • 9 (can be prepared 1 day ahead. cover and refrigerate.) pour soup into saucepan.
  • 10 stir in cream and blue cheese.
  • 11 simmer over medium heat until cheese melts and soup is smooth, whisking constantly, about 2 minutes.
  • 12 season to taste with salt and pepper.
  • 13 ladle into bowls.
  • 14 sprinkle with chives and serve.
