Blackberry Batter Pudding

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 lb fresh blackberries
  • 4 whole eggs
  • 2 egg yolks
  • 1/4 cup all-purpose flour
  • 1/2 cup caster sugar
  • 1 pinch salt
  • 2 cups milk
  • 2 -3 tablespoons brandy
  • powdered sugar

Recipe

  • 1 preheat oven to 375°f.
  • 2 arrange berries in the bottom of a greased 10" baking dish.
  • 3 combine eggs, egg yolks, flour, sugar, salt and milk in a blender or food processor.
  • 4 process until well mixed.
  • 5 pour batter over berries.
  • 6 place dish on a baking sheet.
  • 7 bake for 30-40 minutes, or until puffed and golden.
  • 8 remove from oven and cool; batter may sink a little.
  • 9 just before serving, spoon brandy over top and dust with powdered sugar.
