Blackberry Batter Pudding

Ingredients

- 1 lb fresh blackberries
- 4 whole eggs
- 2 egg yolks
- 1/4 cup all-purpose flour
- 1/2 cup caster sugar
- 1 pinch salt
- 2 cups milk
- 2 -3 tablespoons brandy
- powdered sugar
Recipe
- 1 preheat oven to 375°f.
- 2 arrange berries in the bottom of a greased 10" baking dish.
- 3 combine eggs, egg yolks, flour, sugar, salt and milk in a blender or food processor.
- 4 process until well mixed.
- 5 pour batter over berries.
- 6 place dish on a baking sheet.
- 7 bake for 30-40 minutes, or until puffed and golden.
- 8 remove from oven and cool; batter may sink a little.
- 9 just before serving, spoon brandy over top and dust with powdered sugar.
