Banana Nut Muffins (sbd Phase1)

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 (16 ounce) can great northern beans, drained and rinsed
  • 4 large eggs
  • 1/2 cup splenda granular, sugar substitute
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons banana extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 cup walnuts, chopped

Recipe

  • 1 preheat oven to 350.
  • 2 drain beans, rinse well and drain again.
  • 3 blend the beans and eggs together until smooth.
  • 4 add splenda, olive oil, vanilla and banana extracts, cinnamon and baking powder to the bean mixture and mix well.
  • 5 stir in the walnuts.
  • 6 pour batter into greased 6 cup muffin tin.
  • 7 bake at 350 for 20-25 minutes. check after 20 minutes. muffins are done when toothpick inserted in the middle comes out clean.
