- 2 cups milk
- 1 cinnamon stick
- 3 slices lemon rind
- 1 pinch salt
- 1/2 cup short-grain rice
- 3 medium egg yolks, beaten
- 1/3 cup sugar
- 1/4 cup butter
- 1 teaspoon ground nutmeg
Recipe
- 1 in a large saucepan, slowly bring the milk, cinnamon stick, strips of lemon rind, and salt to a boil. with a slotted spoon, remove the cinnamon and lemon rind. stir in the rice and egg yolks, reduce the heat, and allow the rice to simmer for about 15 minutes, stirring constantly.
