Arroz Con Leche (spanish Rice Pudding)

Ingredients

  • Servings: 4
  • 2 cups milk
  • 1 cinnamon stick
  • 3 slices lemon rind
  • 1 pinch salt
  • 1/2 cup short-grain rice
  • 3 medium egg yolks, beaten
  • 1/3 cup sugar
  • 1/4 cup butter
  • 1 teaspoon ground nutmeg

Recipe

  • 1 in a large saucepan, slowly bring the milk, cinnamon stick, strips of lemon rind, and salt to a boil. with a slotted spoon, remove the cinnamon and lemon rind. stir in the rice and egg yolks, reduce the heat, and allow the rice to simmer for about 15 minutes, stirring constantly.
