Bacon, Egg And Asparagus Pie

Ingredients
- 1 (400 g) packet frozen puff pastry
- 4 eggs
- 4 slices rindless bacon
- 2 tomatoes
- 1 can asparagus spear
- freshly ground black pepper
Recipe
- 1 roll out pastry on a lightly floured board to 2mm thickness.
- 2 line a 20cm square cake tin with the pastry, slashing and sealing on corners to make pastry fit.
- 3 re-roll remaining pastry for the top.
- 4 break eggs into pastry.
- 5 prick yolks.
- 6 chop bacon roughly.
- 7 add to pastry shell.
- 8 slice tomatoes and lay over egg mixture.
- 9 drain asparagus and arrange spears over tomato.
- 10 grind over black pepper.
- 11 place pastry top over pie.
- 12 trim edges and crimp to seal.
- 13 cut 2 holes in top of pastry.
- 14 bake at 200c degrees for 30-40 minutes or until pastry is golden and filling is set.
- 15 serve hot or cold.
