Bacon, Egg And Asparagus Pie

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 1 (400 g) packet frozen puff pastry
  • 4 eggs
  • 4 slices rindless bacon
  • 2 tomatoes
  • 1 can asparagus spear
  • freshly ground black pepper

Recipe

  • 1 roll out pastry on a lightly floured board to 2mm thickness.
  • 2 line a 20cm square cake tin with the pastry, slashing and sealing on corners to make pastry fit.
  • 3 re-roll remaining pastry for the top.
  • 4 break eggs into pastry.
  • 5 prick yolks.
  • 6 chop bacon roughly.
  • 7 add to pastry shell.
  • 8 slice tomatoes and lay over egg mixture.
  • 9 drain asparagus and arrange spears over tomato.
  • 10 grind over black pepper.
  • 11 place pastry top over pie.
  • 12 trim edges and crimp to seal.
  • 13 cut 2 holes in top of pastry.
  • 14 bake at 200c degrees for 30-40 minutes or until pastry is golden and filling is set.
  • 15 serve hot or cold.
