Cornmeal Jambuster Muffins

Ingredients

- 1 1/2 cups cornmeal
- 1 1/2 cups buttermilk
- 2 1/4 cups flour
- 1 cup sugar
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3 eggs, lightly beaten
- 3/4 cup margarine, melted
- jam
Recipe
- 1 combine milk and cornmeal.
- 2 let stand for 10 minutes.
- 3 line baking tin with paper muffin cups.
- 4 combine dry ingredients.
- 5 blend cornmeal mixture, eggs and margarine.
- 6 fill muffin cups.
- 7 make a well in each muffin.
- 8 fill each well with 1 tsp or more of jam.
- 9 bake in 400* oven.
- 10 check after 15 minutes.
- 11 cooking time varies with oven and muffin size.
