Cornmeal Muffins

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 -4 tablespoons sugar
  • 1 egg, beaten
  • 1 1/4 cups sour cream
  • 1/4 cup shortening, melted

Recipe

  • 1 combine first 6 ingredients in a large bowl; make a well in center of mixture. combine egg, sour cream, and shortening, add to dry ingredients, stir just until moistened.
  • 2 spoon into greased muffin pans, filling two-thirds full.
  • 3 bake at 425f for 15 minutes or until golden brown. remove from pans immediately.
