Cornmeal Muffins

Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 2 -4 tablespoons sugar
- 1 egg, beaten
- 1 1/4 cups sour cream
- 1/4 cup shortening, melted
Recipe
- 1 combine first 6 ingredients in a large bowl; make a well in center of mixture. combine egg, sour cream, and shortening, add to dry ingredients, stir just until moistened.
- 2 spoon into greased muffin pans, filling two-thirds full.
- 3 bake at 425f for 15 minutes or until golden brown. remove from pans immediately.
